"Hi my name is Susan Zeitoune, I am 17 years old and I made a dinner party for my friend's birthday. 
The theme was Dylan's Candy Bar so I wrapped cubes with Dylan's wrapping paper and put octagonal 
mirrors on top for individualized food. The food was all homemade and placed in differently shaped mini lucite cups and bowls. 
(From left to right) mini penne noodles with sauce, mini veggie pizzas, calsones, mini pizzas, 
fried breaded fish, mini spinach cupcakes, mini salmon with teryaki sauce over couscous, 
sambousak, grilled french green beans with peppers, and mini challi rolls. 
The names for place cards were written on the little striped candy boxes and the napkins were 
Dylan's Candy Bar dessert napkins. For dessert there was 10 different hard and chewy candies in cones 
to choose from, mini Oreo cakes with frosting, mini fruit kabobs , Kit Kat and
M&M cake and Dylan's Candy Bar fondant cake. (All homemade)."

I’m so impressed with Alexis and Sarah Mizrahi. You can not put a price upon the creativity and energy that went into this table. Give these girls a round of applause for a job well done, and after Passover please call Alexis and Sarah for all of your gourmet flavored popcorn orders!!!  Marlene
“Hi Marlene,
Our Crazy Corn business was closed for Pesach – so we had a lot of extra time on our hands and wanted to surprise our mother with a beautiful table. We made our own hagadahs out of croc embossed leather we found in the fabric store. We had my father reprint the hagadahs we’ve been using in my family for years and covered them in leather and trimmed them with ornate ribbon and tassles. To top it off we had our names printed on them.
We bought some turquoise fabric, and used it as a tablecloth. We had extra leather and used that as the runner and then added another touch of the turquoise with pleated tulle running down the center - it definitely added to the holiday spirit by giving off the aura of the splitting of the sea. We got 4 tall skinny vases and place them along the tulle. As the centerpiece we put a modern white tall cake plate that we used as the ke’ara (seder plate)
To really tie it all together we found this crazy sequined trimming which we made into napkin rings.
We also found these gorgeous gold croc embossed chargers that took the table over the top.
My mother and all of our guests were wowed and really felt as if they were sitting by a kings table!! We’re thinking about switching our professions! lol
We went around the house and found things that we could put the symbolic foods in to complete the look. We put the celery and salt water in martini glasses, the endives in champagne flutes, bitter herbs in vases and the haroset in dessert cups. The guests found it cute, to be dipping into martini glasses, and pulling endives out of champagne flutes!!
We want everyone to know that its really not hard or expensive to set a table like this. we bought everything from save-a-thon (including the vases $5 each and chargers!!) ok, so the Hagadahs took some time, but everything else was done with ease!!
If this is what we can do to an ordinary table, imagine what we can do with popcorn!?!

“I’ve always felt that an important part of the Pesach Seder  table meant including the children in the telling of the great miracles that happened when our nation was taken out of Egypt.  Sometimes after  saying the “Ma Nishtana” the very young ones are bored and distracted early on.  In order to capture their attention and bring the seder to their level of understanding, I decided to make it exciting and meaningful for them.  I purchased all types of miniature wild animals, pyramids, and frogs and scattered them all across the Seder table.  You can imagine the excitement that was had when the little ones spotted the table!  I also purchesed froggy hats for them to wear and before you knew it, they were hopping around the table and asking all types of questions about the animals. Both the adults and the children got involved with the explanations. The funny thing was that after the Seder, the older children hid the climbing frogs all around the house.  Guess who had the biggest suprise of all when I had frogs in my sink, my pantry, my shoes, and anywhere else you could think of!!   I’m sure the children will never forget this Seder table.

This delicious frozen Passover holiday dessert can be served alone with whipped cream and berries, or alongside our decadent chocolate mousse recipe.

An “ice cream” treat everyone will love.

Recipe Ingredients:

  • 1 box strawberries, Sliced
  • 2 egg whites
  • 1/2 cup sugar

- Beat egg whites and sugar; then while still beating, add sliced strawberries one piece at a time.
- Beat for 15 minutes, spoon into a large bowl and freeze. Serve like ice cream.

Serve along with fresh berries and whip cream.

I’m always on the lookout for grilled salmon recipes, and when I came across this sauteed salmon recipe idea from my friends over at kosher.com and Joy of Kosher, I was inspired to put in on my before- the-fast menu .

 Health benefits of wild salmon:

  • speeds up your metabolism. This facilitates your sugar absorption rate and can lower your blood sugar level. Which in turn lowers your risk of developing diabetes.
  • For  shiny hair, bright eyes and healthy skin,  salmon consumption can do provide that as well.
  • Four ounces of wild salmon gives you a full day’s required amount of Vitamin D. That same amount of salmon also gives you more than half of the B12, niacin and selenium that you need daily. That four ounce serving of salmon gives you almost thirty grams of protein. That’s more than half of the Food and Drug Administration’s recommended daily amount.
  • salmon is a natural anti-depressant
  • Warning: FDA and EPA have  issued a recommendation that pregnant women and young children eat no more than two servings, or 12 ounces, of salmon and other low-mercury fish each week.

Health benefits of baby spinach:

  • A cup of spinach contains a little under 7 calories, almost a gram of fiber, and high levels of vitamins A and C.
  • Spinach has tons  of anti-cancer benefits. It has four times the beta carotene of broccoli. Spinach is also an excellent source of folate – an ounce contains nearly 25% of our daily requirement.
  • Spinach protects against age-related macular degeneration, a serious eye disease affecting older people.
  • Spinach contains folate which has cardiovascular benefits and promotes a healthy pregnancy.
  • Note: Spinach is among the 12 foods on which high levels of pesticide residues have been highly detected.  Please consider buying and eating only organically grown spinach.

Wild Salmon Chunks Served on a Bed of Baby Spinach:

Ingredients:

  • 2 tablespoons: olive oil
  • 1 1/2 pounds:salmon fillet, skinned and cut into bite-sized pieces
  • 1/2 red bell pepper, seeded, veins removed, diced
  • 1/2 green, yellow or orange bell pepper, seeded, veins removed, diced
  • 1/2 cup:golden raisins
  • 1/4 cup:pine nuts
  • 1/2 teaspoon:salt
  • 1 (10-ounce) package:baby spinach
  • 1/2 cup of your favorite homemade vinaigrette.

Preparation:

  1. In a 12-inch skillet, heat olive oil over medium heat. Add salmon, peppers, raisins, pine nuts and salt.
  2. Sauté for 7-8 minutes, until salmon is opaque and peppers are tender.
  3. Place baby spinach in a salad bowl and spoon warm salmon mixture over spinach.
  4. Drizzle balsamic dressing over the salad and serve warm or at room temperature.

Dear Jewish Hosts and Hostesses,

If you are looking for some tasty recipes for Passover, than this is an easy one to try.

One of the reasons that I like Chilean sea bass is that it doesn’t have that “salmon smell”, so if you are having company you wont have to air out the house before your guests come charging in. This sea bass recipe has the juiciness of a fried fish but is of course, assembled and baked in a mess-free flash.

I love it a a main dish for one of the Yom Tov nights, as after  I hopefully survive the Passover  seders AND a Friday night, I know I wont be  in the mood to look at meat for the next couple of days. Enjoy!

Kosher Recipe Ingredients:

  • 4 Seabass fish fillet sliced thin.
  • 3 teaspoons Olive Oil
  • 1/2 cup of matzo meal 0r whole wheat matzo crushed in cuisinart.
  • 1 garlic clove
  • 1/2  cup unsalted nuts (pistachio, pecans, macadamia, walnuts may be used) (I used pecans)
  • lemon juice
  • kosher salt
  • cumin
  • black pepper
  • oregano

Passover Recipe Directions:

  1. Place parchment paper on pan.
  2. Place fish on paper and sprinkle  with lemon juice.
  3. Chop remaining ingredients in food processor adding spices to taste.
  4. Spread chopped mixture on top of fish.
  5. Lightly sprinkle with olive oil or spray with olive oil spray on top.
  6. Bake at 400 degrees for 25 minutes or till done.
  7. If you don’t eat nut on the Passover then just mix the matzo meal and chopped matzo with the spices, and sprinkle according to the directions….

This modern twist on the traditional Charoset recipe for your Passover Seder,was created by my new friend  Jennifer Abadi, author of a wonderful new cookbook,  A Fistful of Lentils . Jennifer’s passion for carrying on her family’s Syrian Jewish tradition is evident within the 125 recipes that she shares with us.

Upon reading that Jennifer’s recipes were inspired by her grandmother Fritzie Abadi A’H  I realized that Jennifer and I have a connection. Five years ago, I set out to produce a coffee table book  documenting the artwork of 200 of our communities artists of which all of the proceeds were donated to Magen David Yeshivah in Brooklyn.

“Our Art”- A collection of the Artists of the Syrian Jewish Community.

Guess which artist’s work is on the first page? None other than Fritzie Abadi A’H’ herself!

The quote on the page, as told to me 5 years ago by Mrs. Luna Sutton (who recently passed away in her late 90′s and who bought the painting from Fritzie 50 years ago), is,

“When Fritzie Abadi painted these in the 1920′s, it was said that she was inspired by the strong features of the typical Syrian woman that immigrated to America at the time.”

So, you can see that in her own way, Jennifer’s grandma Fritzi was also trying to preserve memories of her heritage!

You should also know that Fritzi’s father Chacham Matloub Abadi was a great Rabbi of the Syrian community in the early 1900′s, but that is another story…..

Moroccan Charoset “Truffles” with Dates, Raisins, and Walnuts, Rolled in Cinnamon

“Here they are!!  I rolled the Moroccan Charroset Truffles  in three flavors: cinnamon, crushed almond and coconut.
They are so delicious!  Yep, I tasted one. April. “

  • ½ cup walnuts
  • 1/4 cup slivered almonds
  • 6 large Medjool dates or 10 regular-size dates, pitted and coarsely chopped
  • 1/4 cup golden raisins
  • 1/4 cup dark raisins
  • 1 to 2 tablespoons sweet Passover wine, such as Manischewitz

For Serving:

1 box of matzah sheets or tea size matzahs

Cinnamon (for dusting the outside)

1. Place the walnuts and almonds in the food processor and pulse until coarsely ground, but not into a meal-like consistency (about 30 seconds).

2. Add the dates and raisins and combine in the food processor until a thick paste is formed.

3. Add one tablespoon of the wine at a time until the paste is smooth but not so sticky that you cannot roll it into small balls.

4. Taking approximately one tablespoon at a time, roll the thick paste into 1-inch balls* (if the paste is sticking too much to your hands, try dipping your hands in cold water and then rolling them) and sprinkle the outsides lightly with cinnamon. Store balls in a tightly covered plastic container in refrigerator for up to one week.

5. Dust the outsides of the balls with ground cinnamon. Serve charoset balls at room temperature on a platter, alongside tea matzahs (can also be served as a paste in one or two small dessert bowls, placed at either end of the seder table.)

Yield: Serves 6 to 8 (approximately 1 ½ cups or 24 one-inch balls)

*Note: If you wish to serve the mixture in the more common way of a paste in a bowl, then add a little more wine and warm water to make a bit smoother and softer for spreading.

Syrian Style Pistachio Macaroons

While its so easy to serve your  Passover  desserts from a can, there is nothing more delicious than a homemade macaroon, especially  if you are lucky enough to get a recipe from Jennifer Abadi, community chef and cookbook author intent on preserving the recipes of her Sephardic heritage. The main ingredient for this Passover dessert is the Pistachio nut or “fisto.” These nuts are a favorite snack of the Syrian Jewish community tracing back to the old days in  where they would most certainly crack pistachio nuts while playing a good game of toleh or backgammon with friends. You can find shelled pistachio nuts  in Kosher Corner on McDonald Avenue in Brooklyn, or from Ohnuts.com.
Ka’ik ib’Fis’dok (Syrian Style Pistachio Macaroons)
1 1/2 cups shelled, unsalted pistachios
Egg whites from 2 large eggs
1 to 2 teaspoons orange blossom water (optional), to taste
3/4 cup granulated sugar
*Confectioners’ sugar, for decoration
1. Preheat oven to 350 degrees F.
2. Place the pistachios in a food processor and blend until finely ground. Set aside.
3. In a large bowl, beat the egg whites on high speed with an electric hand-held mixer until stiff peaks form. (If you decide to add the orange water, fold it into the beaten egg whites at this point.) Gently pour the sugar over the stiff egg whites and fold in with a wooden spoon. Add the ground pistachios and fold in with wooden spoon until fully mixed into the egg white mixture.
4. One tablespoon at a time, place the pistachio “dough” on a greased baking sheet, leaving 1 inch in between each cookie. Bake until lightly golden around the edges, about 15 to 20 minutes.
5. Cool for half an hour before removing from the sheet or the cookies may break apart too easily. (You may freeze the cookies at this point by placing them between layers of wax paper and tightly sealing inside a plastic container. They will last up to 3 weeks. When ready to serve, remove each layer of cookies on the wax paper and place on the countertop to defrost for half an hour. Sprinkle with the confectioners’ sugar and serve.) Sprinkle the tops of the cookies with confectioners’ sugar and serve on a decorative platter with pistachio or vanilla ice cream (or with sorbet).
Yield: Serves 6 to 10 (about 1 to 11/2 dozen cookies)
*Note: If cornstarch is added, then its use is prohibited to Ashkenazim during Passover. Try the following as a substitute:
“Mock” Confectioner’s Sugar for Passover
1/3 cup plus 2 tablespoons potato starch
2/3 cup superfine white sugar
1. Pulse together in a food processor (about 2 minutes) to combine.
2. Sprinkle on top of your favorite Passover dessert for decoration
Yield: 1 cup plus 2 tablespoons (18 tablespoons)

My mother in law is the perfect source for a Passover recipe, as she is really the hostess with the mostess. She actually wrote up this recipe for all of my Jewish Hostesses so please let her know if you like it! (comment below!)

By the way, I’ve been reading that dates are very healthy for pregnant women, as they are very healthy for a fetus’s brain development. Please get more info HERE.

Passover Ingredients for Chewy Date Nut Bars:

  • 1 cup of chopped nuts
  • 3/4 cup matzo meal
  • 1/3 cup of sugar
  • 1/2 cup of margarine (if you would like to substitute the margarine- click and read this article)
  • 1 cup of pitted dates
  • 1/4 cup orange juice
  • 2 tsp grated orange rind
  1. Beat nuts with matzo meal, sugar, and margarine until crumbly and moist reserving 1/4 cup of mixture.
  2. Firmly put remainder into bottom of 9″ square pan making a solid base.
  3. Chop dates, beat with orange juice and orange peel until spreadable.
  4. Spread carefully over base.
  5. Sprinkle with reserved topping.
  6. Bake at 350 degrees for 30 minutes.
  7. Cool. Cut into squares.

Dear Hostesses,

Even though this is a sponsored post, I have to honestly tell you that the instant I opened up my bottle of Heering  Coffee Liquor, I closed my eyes and felt like I was in coffee heaven.  The pure aroma of this sweet liquor made me want to swirl a drop of  heavy cream into this perfect blend of Caribbean rum with coffee and cocoa. Throw in a couple of ice cubes and I’m almost  relaxing on a beach in St Barths. Who cares if I didn’t make my hammentashen yet? My packed carry-on is at the front door!

Ok- so when I opened my eyes I realized that my Jet Blue flight was going to have to wait, and instead of Googling “exotic Caribbean vacations”, I Googled “pareve tiramisu”.

A perfect recipe for a meat Purim Seudah….

Pareve Tiramisu Trifle

Cookie Layer:
2 packages Ladyfingers
4 heaping teaspoons instant espresso
Hot water to dissolve the espresso in about ¼ cup
½ cup Heering Coffee Liquor (only $24.99- Purchase HERE)

Mix together espresso, water and liqueur.
pareve tiramisu

Center Layers:
1 8-ounce pareve chocolate bar, in shavings
3 Tablespoons cinnamon

Cream Layer:
5 eggs, separated
5 tablespoons sugar
1 package tofutti cream cheese
1 tablespoon vanilla sugar
½ teaspoon vanilla extract
1 small container pareve whipping cream, whipped
Extra whipping cream for the top

Beat the egg whites until stiff peaks form. Separately beat the yolks with both sugars until pale yellow. Add the tofutti cream cheese and the vanilla extract to combine. Fold in the egg whites. Fold in the whipped cream and chill until using.

To assemble:

Dip ladyfinger cookies in the coffee mixture (do this individually and quickly otherwise the cookies will be too mushy). Layer the bottom of the trifle bowl decoratively with the soaked cookies. Spoon 1/4 of the cream mixture over the ladyfingers. Sprinkle generously with chocolate then cinnamon. Repeat with more ladyfingers on top of the cinnamon layer, then cream, chocolate and cinnamon. Repeat 4 times. Top with the extra whipped cream and more chocolate and cinnamon. Chill until serving

*This can be made in individual dishes or a low dish. Keep in the refrigerator to cut out pieces.

Some more cocktails to serve:

Cherry Royal

  • 1 part Heering Cherry Liqueur
  • 4 parts champagne or sparkling wine

Pour Cherry Heering liqueur and champagne into a champagne flute and serve ice cold.

Cherry Fizz

  • 2 oz Cherry Heering Liqueur
  • Juice of 1/2 lemon
  • Carbonated water
  • 1 Cherry

Shake Cherry Heering and lemon juice over ice and pour into a highball glass with 2 ice cubes in it. Ad carbonated water and a cherry.

Cherry Ginger Martini

  • 1 part Heering Cherry Liqueur
  • 1 part lemon juice
  • 1 part simple syrup
  • 1 small piece of fresh ginger

Muddle fresh ginger in a mixing glass. Add Cherry Heering Liqueur, lemon juice, simple syrup and ice. Shake and strain into a chilled cocktail glass.

Note: muddling simply means crushing, so use a muddling bar tool or simply back of a large wooden spoon to crush the fresh ginger pieces.

Coffee Sourz

  • 1 part Heering Coffee Liqueur
  • 1 part lemon juice
  • 1 part simple syrup

Fill a shaker with ice. Add ingredients, shake well and serve in a rocks glass. Garnish with a lemon slice and a cherry.

Temp Tee Cream Cheese,
The hot pink round Temp Tee cream cheese container brings back cozy childhood memories of pure  Passover comfort slathered on a crispy matzo break off  piece from the familiar cardboard Passover matzo box.
Temp Tee was almost always guaranteed not to break my matzo as it spread, which was a Passover feat almost equal to the parting of the red sea. (Well- not really, but I’m just trying to make a point!)
Temp Tee cream cheese on matzo was always a fun kid friendly way to wake up to breakfast on a lazy Passover morning, and now, four decades later, reality has plowed its way into my kitchen, and I’ve come to the conclusion  that those lazy days are over!
You can still plop that pink Temp Tee cream cheese tub on a new Passover glass dish right next to a box of matzo with the paper peeling over, and say “Make your own lunch, guys!” but  here as The Jewish Hostess its my job to inspire you to  break out of that matzah box!

This beautiful Passover Seder was styled by Marjaneh from Candybar Couture with lots of help from her mother Guity. Although, Passover is a Jewish Holiday celebrated for thousands of years, this family who is originally from Iran, took a very modern approach to designing the party. The party was held at the Huntley Hotel in Santa Monica. The second floor patio that was covered halfway by a beautiful white tent that was the ideal location to seat more than 70 guests. It is very common for Iranians living in Los Angeles to have a large number of guests at the Seder. They invite friends and lots of extended family. A microphone had to be used for all of the guests to hear the prayers!

The food that is used for the prayers, along with flowers were used as the centerpiece.

They included lettuce, bitter herbs, Matzos, vinegar and Halegh which is the Iranian version of Charoset. The highlight of the nigh is generally Dayenu where it is customary for Iranian Jews to playfully hit each other with the raw scallions. This tradition symbolizes the whips of the slaves in Egypt.”

“This year we went for a fresh frog-inspired spring theme for our Passover table. Paper lotus flowers on lilly pads are fun place cards. Appetizer plates off center add to the floating lilly pad feel. Round woven place mats down the center of the table make a fun lilly pad kind of runner, with water lilly candle holders and candles adding a glowy ambiance. Finally, wire garden frogs add a little whimsy.

“Hi Marlene!
Our gourmet popcorn business closed for pesach-so we finally had some free time on our hands! Like always-we suprise our mother with a beautiful table every holiday. This years inspiration was “hag ha’aviv-holiday of the spring. ” A trip to the flower market, & a local nursery-& we were done! We rented a camel table cloth,yellow napkins,& bamboo chairs from Brooklyn Party Rental -Sonny Halawani- Our centerpieces were grass we bought already in those rustic wood crates, glass jars filled with moss, real birch wood, birds, lemons & limes.. For place cards we potted moss in terra cotta pots, & used birch wood scraps (we got it free!) that we ripped in small pieces for the names. Next to that, we placed our home-made leather bound Hagadahs! Our favorite part of the whole table – everyones little shelf with all the symbolic foods. We found these lucite “cabinet organizers” for cents-& we turned them into individual ke’aras! It was soo easy & so much fun! Enjoy!!”

If you  get sick of Matzoh, then this is a quick way to disguise that cardboardy crunch.

Serve with sliced tomato and cheese, tuna fish, egg salad, or even a hamburger!

Ingredients for this Pesach Recipe:

  • 2/3 cup of water
  • 1/3 cup of oil
  • 1 tsp of sugar
  • 1/4 tsp salt
  • 1 cup of matzo meal
  • 3 eggs

Pesach Recipe: Directions for preparation:

  1. Preheat oven to 375 degrees
  2. Boil water, add salt,oil, matzo meal and sugar
  3. Stir, and remove from heat.
  4. Beat eggs into mixture one at a time.
  5. Spoon batter onto sprayed parchment paper into smal mounds.
  6. Bake 1 hour at 375 degrees.
