Healthy Shabbat Blueberry Crumble

My cousin Sharon sent me this great  recipe a couple of months ago, and I decided to dig it up from the archives because so many of The Jewish Hostess readers loved it.Its so perfect for anyone looking for a last minute low sugar, healthy dessert for Shabbat. Serve with any flavor parve ice cream or Tofutti.

I made this for Shabbat two weeks in a row because everyone loves it so much, not so sweet and not so much oil.  This recipe is small (a 9X9 baking pan) so I made it larger, doubling the recipe exactly and it worked well in a 3 quart pyrex.  It gets cut into squares and served in a platter so the pyrex works well.

HEALTHY BLUEBERRY CRUNCH

1 ½ CUPS OLD FASHIONED OATMEAL

½ CUP WHOLE WHEAT FLOUR

½ CUP CHOPPED ALMONDS OR WALNUTS

1/3 CUP OIL

¾ CUP PURE MAPLE SYRUP

1 PINT FRESH BLUEBERRIES,, WASHED AND STRAINED

2 ½ TABLESPOONS CORN STARCH

¾ CUP COLD WATER

How to Make this Kosher Recipe

PREHEAT OVEN TO 400 DEGREES

IN A MEDIUM SAUCEPAN PUT THE BLUEBERRIES WITH ½ CUP OF THE MAPLE SYRUP.  BRING TO A BOIL.  DISSOLVE THE CORNSTARCH IN THE COLD WATER AND ADD TO THE BLUEBERRIES.  COOK OVER MEDIUM HEAT STIRRING CONSTANTLY FOR A FEW MINUTES UNTIL IT THICKENS.

IN A LARGE BOWL MIX THE OATMEAL, FLOUR, AND NUTS.  IN A SEPARATE CUP WHISK THE OIL AND ¼ CUP OF MAPLE SYRUP.  ADD THIS TO THE OAT MIXTURE AND MIX UNTIL ALL IS WELL COATED.

SPRAY A 9 X 9 BAKING DISH WITH PAM AND, WITH WET HANDS, PRESS 2/3 OF THE OAT MIXTURE INTO THE BOTTOM.  POUR THE BLUEBERRY MIXTURE EVENLY OVER THIS AND SPRINKLE THE REMAINING CRUMBS ON TOP.

BAKE AT 400 DEGREES FOR 20-25 MINUTES UNTIL GOLDEN.

LET COOL AND THEN PUT IN REFRIGERATOR FOR ONE HOUR.  CUT INTO SQUARES AND SERVE.

Easy and Healthy Blueberry Yogurt Muffins

With just 80 calories per cup and virtually no fat, tons of vitamin C, great antioxidant power, blueberries,washed  well, should be in your diet.
I discovered this healthy blueberry muffin recipe years ago and I love it because you don’t even need a mixer. It’s low in sugar and you can literally whip it up with a fork in minutes. Bake them this Sunday morning!

Easy  and Healthy Blueberry Yogurt Muffins:

  • 2 cups flour
  • 1/3 cup of sugar
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/4 cup of orange juice
  • 2 tsp vegetable oil
  • 1 tsp vanilla
  • 1 8 oz container of vanilla yogurt (for less sugar use plain)
  • 1 egg
  • 1 cup of fresh or frozen blueberries
  • sugar to sprinkle on top
  1. Combine dry ingredients with a fork and make a well in the center.
  2. Add wet ingredients in the center and stir until moist.
  3. Fold in blueberries and stir just until combined.
  4. Spoon into muffin pans that have been sprayed with Pam.
  5. Bake at 400 degrees for 18 minutes.

Remove immediately. Enjoy.

Every summer we go blueberry picking at Emery’s Blueberry Farm in New Egypt, NJ. www.emerysfarm.com
It is fantastic and so much fun!  A tractor pulled wagon takes you out to the blueberry fields and they give you a bucket to tie around your waist.(You feel like Huckleberry Finn!) The blueberries are organic…so you pick some and then eat some. They are delicious and so healthy…..by the end of the day you feel so much smarter!!
We pick about 15 pounds of blueberries and freeze them on a tray. We eat them all winter and before you know it, it’s summer and time to go blueberry picking again!
Every Friday night we have pie for dessert, apple pie, peach pie, strawberry rhubarb pie……but everyone loves blueberry pie the best.
Here’s my recipe for Blueberry pie made with an oil pie crust that is so easy, parve and delicious!

So Easy Pareve Pie Crust:

  • 1 1/2 cups of flour
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 1/2 cup canola oil
  • 2 tablespoons water

Mix flour salt and sugar together, add oil and water and m ix with wooden spoon till forms a ball.
Roll out dough between 2 pieces of wax paper and turn into a 8  inch pyrex pie plate
Trim edges and reserve for lattice topping.

Blueberry Filling:

  • 3 Cups Fresh or Frozen Blueberries
  • 1/4 Cup sugar(or more if you like it sweet rather than tart)
  • 2 tablespoons brown sugar
  • 1/2 teaspoon cinnamon
  • 1/8 cup flour

Mix all ingredients together in a bowl
Pour into pie plate and top with lattice strips and sprinkle with cinnamon and sugar
Bake at 350 degrees till golden brown and bubbly about 45-50 minutes.

So, the question of the week is, “do I get extra credit for a fabulous Passover dessert if it took me an hour to get it done- or if it took me  10 minutes???”

  • Kosher for Passover Dessert Ingredients from bottom to top:
  • Kosher for Passover Granola- Available on Amazon.com
  • pineapple tidbits
  • banana slices (soak them in the pineapple juice before hand to prevent them from getting black)
  • (optional: sweetened coconut)
  • cream: 2 whipped kosher for Passover toppings mixed with 1 vanilla instant pudding mix..

Instructions

Easy Holiday Fruit Cake

This cake is so great for summertime because you can easily use up a lot of the ripe fruit in your fridge.  Its also easy to whip this recipe up early Friday morning for a Shabbat dessert and then run to the beach!
1/2 cup oil
1/2 cup sugar
2 eggs
1/2 cup orange juice
1 tsp. Vanilla
2 tsp.baking powder
1 cup flour
1/2 cup fresh peaches
1/2 cup blueberries

Whisk oil sugar eggs orange juice vanilla until it becomes creamy. Add baking powder and flour. Place batter on greased pyrex add peaches and blueberries. Bake on 350 for about 1/2 hour.  So easy and light. Enjoy.
