SIMPLY THE BEST PASSOVER PANCAKES

If you are getting tired of matzo cereal for breakfast these days, then it’s time to whip up these Passover Pancakes sent in by Nadine Salama. With the kids home from school for Passover, it’s a great way to keep them occupied for about 10-15  minutes in the morning! Let the bigger kids read the instructions and measure out the ingredients. They can all chip in and chop up strawberries, bananas, and throw in chocolate chips. Forget about the mess and make it fun for them. They will always remember how yummy you made their Passover  mornings! Let me know how they come out!

SIMPLY THE BEST PASSOVER PANCAKES
MAKES 10-12 PASSOVER PANCAKES:
·   WARM 1 ½ CUPS MILK
·   ADD 1 CUP MATZA MEAL, MIX, LET STAND 10 MINUTES TO COOL
·   ADD 3 BEATEN EGGS, 3 TBS MAPLE SYRUP or HONEY, 1 TSP SALT
·   BUTTER PAN OR SKILLET, AND COOK NORMALLY AS YOU WOULD PANCAKES
ADD STRAWBERRIES, BANANAS,  RASPBERRIES , CHOCOLATE CHIPS, and ANYTHING ELSE TO MAKE YOUR PASSOVER  BREAKFAST PANCAKES MORE EXCITING!

Very Vanilla Vegan French Toast

My mother concocted this recipe from one of her favorite cookbooks from the  Candle Cafe. I was in shock when she told me there was tofu in the recipe! And I know what you’re thinking, tofu????? Yes, there is tofu and the recipe is great, so just try it for a healthy change. Summer is coming!!!!!!

This recipe is also great because its dairy free.

Parve

1 pound vanilla silken tofu
1 1/4 cup rice milk
3 tsp ground cinnamon
1 tsp vanilla extract
6-8 slices of  spelt bread (or bread of your choice)

In a blender, combine the tofu , rice milk, cinnamon, and vanilla, and blend until smooth.
The consistency should be fairly liquid
Pour the mixture into shallow bowl.
Add bread slices and immerse both sides of the bread in the batter until soaked through.
You can add more rice milk if necessary.
optional: either bake whole platter in the oven on 350 for 40 minutes uncovered, or you can cook each slice in a large skillet over medium heat using coconut butter or safflower oil.
The toast should feel slightly crispy before removing from the skillet.
Serve with fresh fruit and confectioners’ sugar if desired. Serve Organic 100 % Pure Maple Syrup on the side

Recipe Ingredients

Serves 4

Directions

  1. Place matzos in a bowl, and cover with water. Place a plate on surface to keep matzos submerged. Let stand for 5 minutes, and drain. Return to bowl.
  2. Whisk eggs and salt together in a small bowl. Add to matzo. Add sugar, apple, raisins, cinnamon, and 1/2 cup oil. Gently stir until combined.
  3. Heat remaining 2 tablespoons oil in a large skillet over medium-high heat. Spread matzo mixture evenly in skillet, pressing firmly into pan. Cook, undisturbed, for 5 minutes. Carefully flip with a spatula, 1 piece at a time. (The mixture will break into 3 or 4 pieces.) Cook until golden brown, about 5 minutes. Spoon onto serving plates. Serve hot or warm with toppings if desired.
