Chicken Cutlets Stuffed with Curried Vegetables, Olives, and Brown Rice


  • one pkg of white meat chicken cutlets thin
  • one cup of brown rice
  • one onion, fresh garlic
  • celery
  • oregano
  • one jar of pitted calamata olives
  • olive oil
  • one bunch of asparagus
  • Sauce:
  • 1/2 cup of of calamata olives
  • red pepper flakes
  • fresh oregano
  • 1/2 tsp of curry powder
  • 1/4 cup of water


  1. Recipe for chicken roll ups you will need one pkg of white meat chicken cutlets thin , one cup of brown rice ,one onion, fresh garlic , celery , oregano, one jar of pitted calamata olives , olive oil ,one bunch of asparagus.
  2. Put a little olive oil in a pot.
  3. Dice onion and celery small and sauté onion and then sauté celery.
  4. Add brown rice with two cups of water ,salt and pepper, and olives till cooked , rinse cutlets and stuff and roll and put in a glass Pyrex drizzled with olive oil and add 6 cloves sliced garlic,
  5. Prepare sauce:
  6. In a cup put 1/2 cup of juice of calamata olives , red pepper flakes , fresh oregano , 1/2 tsp of curry powder a 1/4 cup of water mix and pour this on chicken plus one cup of calamata olives.
  7. Bake at 350 for 45 min covered and 20 min uncovered
  8. Let cool and then wash and trim asparagus and push like two or three pieces through cutlet , warm and serve on a pretty platter .

 The Perfect Savory Mushroom Turkey Stuffing by Julie Esses

“Hi Marlene-

  • Two tablespoons of Earth Balance
  • Two medium celery stalks
  • One cup one medium onion chopped
  • One quarter cup fresh parsley
  • One tablespoon chopped sageor one teaspoon dried sage leaves
  • One and half teaspoons chopped majoram
  • Three quarter teaspoon fresh tarragon leaves or one quarter teaspoon of dried tarragon
  • One half teaspoon salt
  • Salt seven cups soft bread cubes (you can use challah)
  • Two medium carrots shredded
  • One and half cups one medium zuchini shredded
  • One cup one cup chopped fresh mushrooms
  1. Melt Earth Balance  in ten inch nonstick skillet over low medium heat
  2. Cook celery and onion in butter stirring frequently until onion is tender
  3. Stir in parsley, sage, majoram, tarragon, and salt.
  4. Mix bread cubes, carrots, zuchini, and mushrooms in a large bowl add celery mixture and toss.
  5. Mixture is now ready to stuff.
  6. Refrigerate turkey with stuffing until ready to roast
  7. Bake leftovers in a  pyrex at 350 degrees. Enjoy!

Needed for this Kosher Recipe : Sugar Detox

  • Olive oil                                        1/8 t
  • Onion, chopped                            ½ c
  • Celery, chopped                           ¼ c
  • 1 Garlic  minced
  • Shitake mushroom, sliced           1/3lb
  • Oyster mushroom, chopped        1/3 lb.
  • Portabella mushroom, chopped   1/3 lb.
  • Millet                                                  ½ cup
  • Thyme   ground                                    2 t
  • 1 Bay leaf crumbled
  • Vegetable stock 32 oz.
  • Salt     ½ t
  • Pepper   1 t

Sugar Detox Recipe Directions

  1. Sauté the onion celery and garlic in olive oil
  2. Add millet and lightly brown
  3. Add mushrooms and lightly brown
  4. Add to vegetable stock and bring to a simmer about 20 min
  5. When cool, blend in food processor or hand held emulsifier, add water if to0 thick.

Apple juice-ginger drink and Lavander lemonade...

After all of that charoset and matzoh, its time to give our bodies a fresh start. Here are some  juicy recipes to help  jump start your spring!

“Imagine us all being kids again and we have spent the day out in a big huge pile of beautiful dirt, digging holes, making castles, playing with toys, living large. We come back inside and it’s time to clean up. How? Every which way; we clean our hair, our nails, our skin, our feet, our backs, our ears… wherever the dirt and gunk of the day got into. Same goes for cleansing our insides, and juicing cleanses the cells faster than any other food that I’ve found. Cleansing is not “new, and improved.”

We are all cleansing right now, and have been since the moment of conception. Every cell is constantly peeing and pooping. Every time we breathe out, we’ve cleansed our body of the metabolic waste known as carbon dioxide. Every time we have a bowel movement, our body is eliminating old cellular material (interesting: up to 40% of every bowel movement is dead cells). Cleansing occurs because our body’s cells are constantly dying and being replaced with new cells. Our spleen and liver and stomach cells do it, our intestinal walls do it, even our bones and muscle cells do this regeneration circle of life. All vegetable juicing does is improve this spring-cleaning regeneration process.

1. There is hardly any digestive work needed to process raw, enzyme  active liquid. Vegetable juice gets into the system quickly. 

2. Squeezed vegetable juice is very nutrient-dense. This concentration acts to supercharge the system in the same way that herbal tinctures work. One of the words we are going to hear more about over the next few years is “phytonutrients,” or plant chemicals. They are proving-as those who have switched to whole foods always have known-to be the key behind keeping our bodies free of cancer, digestive problems, and other degenerative illnesses.

3. The most important, and most overlooked, reason: juicing cleans the liver. I believe that the next big advance in understanding health will be in acknowledging the importance of self-detoxifying and de-sludging our liver. Sure, if you look into any human biology book, it already tells us that there are now over 700 known functions of the liver. But what we don’t realize is how that functionality is dependent on how unclogged it is.”

Orange Apple Carrot Celery Ginger Detox Juice Recipe

2 oranges
1 apple

Carrot Apple Ginger Juice 3of3

3 carrots
1 celery stick
1 inch ginger root

process in juicer and serve.

Pineapple Celery Ginger Flaxseed Detox Juicer Recipe

2 cups pineapple

3 celery sticks

1 inch ginger root

1/8 teaspoon flaxseed oil

Process the celery, pineapple and ginger root through your juicer. Pour into a glass. Then add the flaxseed oil and mix thoroughly. You may want to make this juice and then put in a jar that has a lid — add the juice and the flaxseed oil — put the lid on the jar and shake vigorously to mix. Then pour it into a glass and enjoy!

Cucumber Apple Mint Ginger Juicer Detox Recipe

1 cucumber
2 large sweet apples
2 sprigs fresh mint leaves
1/2 inch ginger root

Process all the ingredients through your juicer.
This is a great detox cleansing juice.

Grape Apple Lemon Lime Juicer Detox Recipe

1 cup of grapes
1 apple
1/2 lime
1/4 lemon

Process and serve in tall glasses. Garnish with a slice of  lime.
