Coconut Crusted Chicken Strips

Thank you  @_wifelife_  via Instagram for sharing your coconut crusted chicken cutlets. I’ve always wanted to try this lowfat version of fried coconut chicken. It’s an easy kid’s dinner and served over salad, it can be dressed up too!

 

“Hi Marlene,

I slice thinly pounded chicken breast cutlets (with all fat removed) into long strips. Dredge in flour that is seasoned with cayenne pepper, black pepper and salt. Then dip is egg wash (I use only egg whites) and them fully coat in unsweetened coconut flakes. You can use sweetened too, up to you. I dip in the egg whites again and do a double coating of the coconut flakes. Heat a frying pan with a thin layer of coconut oil or canola oil. Fry the chicken, a few minutes on each side until golden brown.”

This simple Passover dessert recipe is so easy and delicious with three simple  Passover ingredients!

Chocolate and Coconut Dipped Matzah Dessert for Passover

Ingredients

  • 4 oz. semi-sweet baking chocolate
  • 2 matzos, broken into several pieces
  • 1/2 cup flaked coconut

Instructions

  1. MELT chocolate in small saucepan on very low heat, stirring constantly.
  2. DIP each matzo piece partially into chocolate; sprinkle with coconut.
  3. PLACE on wax paper-covered tray. Let stand until chocolate is firm.

Coconut Date Truffles

I decided to add a twist to the Almond Date Truffle recipe that I posted  last week. This Shabbat  afternoon I kept telling myself that they are totally natural and have no sugar at ALL….. they were so good with a cup of tea…. I wont tell you how many of these delicious treats I ate, but I can assure you that I will be in the Spin room at the gym bright and early tomorrow morning!!!

They are so easy to make. The whole recipe took about 12 minutes to put together and of course needs no baking. Great for Rosh Hashanah, Tu Bishvat, Passover, and all year round!! Gluten Free!!!

Kosher Recipe Ingredients

  • 1 cup pitted dried dates
  • 1 cup chopped  almonds
  • 2 tablespoons honey
  • 1/2 teaspoon of cinnamon
  • 1/2 teaspoon Amaretto (optional)
  • 1/4 cup of unsweetened coconut

Directions for this Kosher Recipe

  1. Grind almonds in a food processor until finely chopped. Transfer to a baking sheet and toast in oven for 5 to 7 minutes, until fragrant  and slightly darker.
  2. Place the dates, almonds cinnamon, and honey in a food processor.  Pulse the processor until the mixture comes together to form a ball.
  3. Form cherry-sized balls out of the mixture and roll them in  coconut to coat.  Enjoy them right away or store them in the fridge for later!

KOSHER RECIPE: Makes 6 Banana Bites

In the world of simple Kosher Recipes, these banana bites are a big hit when little friends get together on the Jewish holiday. The ingredients are all available Kosher for Passover, which makes life much easier  during that hectic holiday week. Kosher kids can stand in an “assembly line” and join in on this yummy DIY snack…Reprint from disney family.com

Recipe Ingredients

1-2 bananas
4 oz chocolate – milk or plain
Dried coconut
Chocolate sprinkles
Colored sprinkles

KOSHER RECIPE: Step One

Peel the banana and trim off the ends. Chop the flesh into 6 bite sized pieces.

Break the chocolate into a heat proof bowl. Put the bowl over a pan of hot water, making sure the bottom of the bowl doesn’t touch the water and melt the chocolate, stirring occasionally. Leave to cool slightly.

Push a straw through the banana, and then drizzle melted chocolate over each piece. (Don’t worry if it’s not perfect, it will still taste delicious!)

KOSHER RECIPE: Final Step

Roll the chocolate-covered banana in the coconut or sprinkles. Let the chocolate harden, and then serve. Store in the fridge and eat within 24 hours.

Ahhh, the count down is on. Only a little while till Shabbat. Why not pamper yourself with a body scrub?Here’s an easy body scrub that you can make right now. Here’s what you’ll need:

 

1.  1 cup of salt; it can be sea, Epsom or plain old table salt.

2.  1 cup of oil; baby, coconut, sweet almond, or even vegetable oil.

3.  6 drops of eucalyptus essential oil.

4.  4 drops peppermint essential oil.

 

(Don’t worry, you can do it without the essential oils this time. But go to a health food store during the week and buy some, so you can use them next time.)

 

• Mix the oil in to the salt. Then add the drops of essential oil.

  • Pour a spoonful of the scrub mixture on to a loofah or a washcloth. It’s ok if the salt has settled to the bottom, get that part on your spoon.
  • Apply the concoction to your skin, liberally. Don’t  scour too abrasively; salt can be harsh on delicate skin. Avoid getting the scrub on your face and neck. But feel free to spend extra time on your elbows, knees, and bottoms of feet.
  • Now spoon on only the oil to your loofah or washcloth. Cover all the spots you got with the salt. Again, you could spend more time on your elbows, knees, and bottoms of feet.
  • Rinse thoroughly in the shower or bath.

You should feel invigorated. The salt exfoliates your skin and the oil softens and moisturizes it. Enjoy this while you can, because your few moments of that “Calgon take me away,”  feeling are almost over… it’ll be time to get dressed and back to reality!
