My friend Jamie is one of the best friends that a girl can have. She also is a gourmet cook and has tons of great tried and true kosher recipes at the tip of her tongue. She is also one of those girls that would never leave out an ingredient so I know all of her recipes are perfected. If I could just find about two hours to  write them all down, I would have enough great kosher dishes to keep this blog going for at least another six months!

“We are all looking for easy Passover recipes, especially great Passover recipes for kids tastes.

This is really the best Passover recipe for  pizza dough . You can use with  any dairy pizza topping or with a meat topping such as lahamagine.

I form balls out of the dough, flatten them with a (Passover) tortilla press and shape with a (Passover) cookie cutter.” Enjoy! -Jamie

Ingredients for this Kosher Passover Pizza Dough Recipe

  • 2 cups of matzo meal
  • 1/2 cup cake meal
  • 1 tbsp salt
  • 1 egg
  • 1 cup  of warm water
  • 2 tbsp oil

Directions

  1. -Mix dry Passover pizza ingredients by hand
  2. - add egg, add oil
  3. -then add water slowly to form a dough ball
  4. - form into balls and flatten by hand.
  5. -pizza tastes better if flattened by tortilla press or rolling pin as stated above.
  6. - top with your favorite kosher for Passover pizza toppings!
  7. or shape and freeze for instant use.

They’re super easy to prepare, freeze well uncooked,and are a fun addition to any type of Jewish holiday menu including Passover, Rosh Hashanah, Sukkot, Thanksgiving and Hanuka! Enjoy!” Debbie Gindi

Ground Lamb on Cinnamon Stick

  • 1 lb ground lamb
  • 1/4 c tart cherry juice or pomegranate juice
  • 1/2 tsp ground cinnamon
  • 1/2 tsp allspice
  • 1/4 tsp ground ginger
  • 1/4 tsp ground cloves
  • 1/8 tsp ground cardamon
  • 1/2 shredded or finely chopped medium onion
  • 1/4 c toasted pine nuts
  • 18 cinnamon sticks

Directions for this Kosher Recipe:

Combine all ingredients in a large non reactive bowl. Form into round ball shape. Firmly insert one cinnamon stick through it. Arrange on tray standing upright(At this point they may be frozen on a tray)cook in preheated 350 degree oven for 15 minutes. May be served with apricot wasabi dipping sauce.

Apricot Wasabi Sauce:

  • 1/2 c apricot preserve
  • 3 TBSP soy sauce
  • 1 TBSP wasabi sauce (such as “golds”) or Passover wasabi sauce.

Combine all ingredients together. Delicious as a dip for chicken beef and lamb.

The Best Sephardic Charoset Recipe Ever

This Sephardic Charoset Recipe has been handed down for generations by my husband’s side of the family- the Shamah’s of Aleppo.

Medjool dates are used. Even though they are double the price, you will find that fresh medjool dates are juicy and extra delectable.

My Mother in law makes the best charoset  or haroset) of all time.  Of course although its a seder plate item, its’ sweet simplicity is just perfect every single morning of Passover as we slather it on (I love whole wheat) matzoh. Sitting down with a cup of coffee and the newspaper on Passover completes this delectable breakfast.

Every year, about 2 weeks before the holiday, my mother in law drops off three medium size tupperwares full of her home made charoset . We put it in the freezer and defrost a container one or two days before enjoying it down to the last drop.

Im so glad that I finally asked her for the recipe and I’d love to share it with all of my Passover hostesses.

Ingredients:

    1. 6 pounds of Medjool dates, sliced lengthwise, pit removed.
    2. Each date must be checked for worms or bugs. (you’d be surprised at what you may find lurking in there!)
    3. Soak the pitted and checked dates in water for 2 hours. Drain.
    4. Boil dates till soft. Cool and slip off the peel if you want a smoother Charoset consistency.
    5. Grind witha Cuisinart with a metal blade.
    6. When serving mix in 2 tbspoons sweet wine per  1 cup of charoset.
    7. Sprinkle with chopped walnuts. The combo is an unforgettable, once a year treat!
    8. Thats it! Store in airtight containers and freeze if its more than three days before Passover. You can store it in pretty jars, wrap with a ribbon and give out as a made -with- love Passover gift.

~BROCCOLI  LOAF~

Broccoli is so healthy, that any way you eat it is good.   Prepare this loaf for a winter

Shabbat and bake potatoes and squash with it,  but make enough for the next day because

broccoli loaf at room temperature might be just the thing for a Shabbat afternoon lunch.

And serve it with the curried roasted potato salad, followed with spice cake.

Heat oven  375º

  • 3 cups of broccoli florets, steamed and pureed in food processor
  • 1/2 cup wheat germ
  • 1/4 cup nutritional yeast
  • 1/2 cup chopped onions or scallion
  • 1/4 cup parsley
  • 1/2 cup vegan cheddar cheese
  • pinch of salt
  • 1 Tablespoon of seasoning
  • sprinkle top with paprika
  • Optional:  pinch of nutmeg on top.

Oil  small loaf pan.  Mix all ingredients together.  Bake 40 minutes or until top browns, and there you are.  Could anything be easier?

Serves 4-5

Note: Nutritional yeast is light and flaky, rich in Vitamin B12, and adds a cheese flavor—

can be used in place of Parmesan cheese.

Organic Wild Salmon with Pecans and Pineapple Reduction

I want to preface this great kosher recipe with a little piece of trivia about myself. I really dislike fish. I dislike fish so much that the mere smell of my son’s school on fish-stick days makes me a little green. So when I say that this salmon recipe is amazing, well, that’s saying a lot. A whole lot.

I first tried this kosher recipe at a 5-star restaurant on my wedding anniversary so many years ago. I have no idea what possessed me to order such a dish, given my aforementioned aversion to fish, but I suppose the lure of such an interesting flavor combination–pecans, pineapple, cinnamon, and…fish!…arose my interest. So I tried it. And I loved it. And I set out to replicate it.

My dairy-free kosher recipe is a culmination of lots of trial and error. Tweaking a spice here, altering a crust ingredient there…. but I finally feel I have managed to reproduce the richly flavorful dish I discovered so long ago. And so, dear fellow Jewish Hostesses, I pass it along to you. Why should the restaurant get all the glory?

What you’ll need for two servings:

- Two filets salmon (I use organic, to ensure no artificial coloring has been added)
- 1 cup chopped pecans
- 2 tablespoons vegetable margarine or Earth Balance margarine, softened
- 2 tablespoons brown sugar
- 1 tablespoon flour
- 2 teaspoons cinnamon
- 1 teaspoon nutmeg* (see note)
- 1 teaspoon chili powder
- 1/2 teaspoon kosher salt

Pineapple sauce:

- 1/2 cup crushed pineapple and juice, pureed in a blender or food processor until smooth
- 2 teaspoons chili powder
- 1/2 cup soy yogurt – vanilla, coconut, pineapple, or pina colada flavors work well

Here’s how you make it:

1) Preheat your oven to 350 degrees F and line a baking sheet with aluminum foil. Place salmon filets skin-side down on your baking sheet.

2) In a small food processor, grind your pecans. You can make them as smooth or as chunky as you like. When they are ground to your liking, transfer them to a small bowl and add your margarine, brown sugar, flour, and spices. Using your fingers (I like to get in there and get dirty!) smush your margarine into the pecans as if you were making a crumb pie crust.

3) When everything is well blended, scoop a small handful of your pecan mixture and press it evenly onto each salmon filet. Be generous. That pecan topping is good stuff.

4) Bake salmon at 350 degrees F until it flakes easily with a fork, or its flesh has turned light pink, about 15-20 minutes. When salmon has finished baking, move your oven rack to the second-highest level and broil briefly (2-3 minutes) to make the pecan crust nice and crispy. Because of the sugar content, watch it closely or it will scorch.

To make your sauce:

In a small saucepan, combine pineapple puree and chili powder. Stir well. Cover and bring to a simmer. I like to call it an “aggravated simmer”. Not quite a full boil, but not just a lazy little simmer either. We don’t want to reduce the pineapple, we just want to break it down and bring out the flavor.
After a good 5-6 minutes of “aggravated simmer” (patent pending on that term, hehe!) turn off the heat and add your soy yogurt. Whisk together to blend well.

Serve your pineapple sauce drizzled prettily over the salmon filet, and garnish with something pretty–carrot curls, a parsley or mint leaf, lemon rosebuds, whatever you like. I served mine with a fresh, springy vegetable salad with lime vinaigrette. You can see the kosher recipe for this lovely side dish here.

*As for the nutmeg, yes, you can totally make it optional.As stated in the kosher recipe, it’s been a work of trial and error, playing with all kinds of in gredient combos to see what works. If you exclude the nutmeg, though, I would definitely replace it with something equally as spicy–maybe ground cloves or an extra pinch of chili powder.

Amy’s tips for designing your own Kosher Dessert bar:

 

  • Take something that inspires you and create your dessert table around it. The design can be inspired from something as personal as a family heirloom to as simple as the pattern on the host’s invitation. Let the dessert table tell a story about the event so that the dessert not only becomes functional, but becomes part of the event design.

  • Create a beautiful backdrop for your dessert table. Décor elements complete the look of a dessert table and a fabulous backdrop is the perfect way to incorporate artistry to the table.

  • Pick beautiful linens and unique vessels to dress up your kosher dessert table. Since your sweets will be the star of your dessert table, the linens and vessels should have a coordinated, tailored look.

  • Always sample your dessert vendors before using them for your event. A beautiful cake is not always the best tasting cake! The key is to find the right balance. Pick kosher desserts that not only look good together, but provide a balance for your guests’ palate.

  • Incorporate some type of signage to dress up the dessert table. This will show your guests how personal your kosher dessert table is. You can have your stationer create personalized tags for you.
  • Provide goody bags for your guests as take-home desserts. It is always a treat to give your guests something to take home to remind them of how sweet the day was.

One of Amy’s favorite Kosher Dessert Recipes (something easy/fun to make): –

Chocolate chip peanut butter cookies or bars – I’m a huge chocolate peanut butter lover!

    • 2 1/2 cups graham cracker crumbs
    • 1 cup peanut butter
    • 1 cup butter, melted
    • 2 cups semisweet chocolate chips
    • 2 3/4 cups confectioners’ sugar

In a medium bowl, stir together graham cracker crumbs, confectioners’ sugar, peanut butter and melted butter. Press firmly into the bottom of a 9×13 inch pan. Melt chocolate chips over a double boiler or in the microwave, stirring occasionally. Spread melted chocolate over the crumb crust. Chill for about 5 minutes, then cut into bars before the chocolate is completely set, then chill until ready to serve.

Have you heard? The whole world is going vegan! Well, not quite. But more and more, people are turning to veganism as a healthy way of life.

Veganism in a nutshell, is a diet without any animal products or bi-products– no meats, no dairy, no eggs. Some “black belt vegans” don’t even consume honey or wear leather, wool, or silk.

This might sound limiting, but if you’re a foodie, you can really get creative and put together delicious, satisfying and health-boosting meals.  In fact, your repertoire might actually grow!

Nowadays we are lucky to live in an age where there is a tasty substitute for every animal based product. Now, some people love fake meats (me!), while others despise them with a fiery passion and stick with the basics — making the most of grains, fruits and vegetables. That, of course, is okay too.

The benefits of giving up animal products are many. Veganism has been proven to help combat high cholesterol and high blood pressure, diabetes and various cancers!

Vegan foods are, by nature, cholesterol free, and a diet based on grains, roots, fruits, vegetables, nuts and beans make you smarter, more attractive and immortal. Okay maybe that last part was a bit of hyperbole, but if you do it right you will feel noticeable better (if a bit gassy at first. Be forewarned, this can be a side effect of changes in diet.), Get enough protein from tofu, seitan and other meat substitutes, and animals everywhere will be extra nice to you (They can smell it, I swear).

Marshmallow Mania : Kosher Recipe #1:

Ooey, Gooey n Crispy Nutty Marshmallow Bars (Recipe #1)

“I have this outrageous recipe for an ooey, gooey n crispy marshmallow bar!  They’re so good I have to double the recipe because we finish it before it hits the dessert table!! Enjoy!!” Debbie Gindi

    • 6 cups chocolate rice cereal(such as cocoa pebbles or cocoa krispies)
    • 1 c raw unsalted peanuts
    • 4 c mini marshmallows
    • 1 cup corn syrup(light or dark)
    • 1- 12 oz bag semi sweet chocolate chips
    • 1 c peanut butter

Optional:(additional 1/2 c mini chocolate chips)

  1. Grease a 13 x9inch pyrex.
  2. Combine cereal,peanuts and mini marshmallows (and additional 1/2 cup chocolate chips if desired)in large bowl. Set aside
  3. In a medium saucepan ,heat corn syrup and 12 oz bag chocolate chips over medium heat until smooth. Remove from heat and stir in peanut butter. Combine cereal mixture and mix well. Spoon into greased pan and pat down wearing disposable plastic gloves or with a piece of plastic wrap to avoid sticky fingers. Chill for at least 1 hour and cut into squares. Yummy !!!

Chocolate Marshmallow Squares (Kosher Recipe #2)

Hi Marlene,

“I got this recipe from my sister Barbara, who got the recipie from a baker who made them for a bake sale.

They are a hit every time we make them! good luck with Marshmallow Mania!” Renna Bildirici

Preheat oven to 350 degrees

  • 3/4 c oil
  • 3/4 c sugar
  • 1 egg
  • 1/4 tsp salt
  • 1 tsp vanilla
  • 1 and 3/4 c flour
  • 1 tsp baking powder
  • 6 graham crackers
  • 1 bag mini marshmallows, or 1 bag large marshmallows cut in half
  • 2 or 3 and 1/2 oz parve chocolate bars
  1. mix oil, sugar, egg, and vanilla. add baking powder, flour, and salt. crush graham crackers and add to mixture.
  2. spray 9″x13″ pyrex. add 3/4 of the dough pressed flat to cover the bottom of the pyrex. bake 12 minutes.
  3. sprinkle with broken chocolate pieces, then marshmallows, then with the rest of the dough crumbled on top. bake for 12 minutes more. cool, cut into small squares or bars and serve.


Marshmallow Baked Alaska (Kosher Recipe #3)

“Easy and Gourmet! ” by Marie Torgueman

  1. Line sides and bottom of Pyrex  with chocolate chip cookies.
  2. Fill Pyrex with softened ice cream flavor of your choice.
  3. Sprinkle and cover with mini marshmallows and chocolate chips.
  4. Freeze to harden the ice cream.
  5. Before serving place in oven and broil a few minutes until marshmallows are toasted but not burnt.
  6. Serve immediately and watch it disappear!

I thought the readers of The Jewish Hostess might enjoy this No Knead Bread Recipe from The Sullivan Street Bakery. Since I have discovered this recipe I have made it many times with different variations, wholewheat, semolina, olives, & roasted garlic with rosemary. It is delicious rustic bread crusty on the outside and chewy and soft with tunnels on the inside…..so easy my 12 year old grandson made it!  The trick is to let the dough rest for 12-18 hours….the longer it rests the more complex the flavors get…Jim Lahey of the Sullivan Street Bakery developed this formula: “- Joy Betesh

Items Needed for this Kosher Recipe

  • 3 cups (430g) flour
  • 1½ cups (345g or 12oz) water
  • ¼ teaspoon (1g) yeast
  • 1¼ teaspoon (8g) salt
  • olive oil (for coating)
  • extra flour, wheat bran, or cornmeal (for dusting)
  • Two medium mixing bowls
  • 6 to 8 quart pot with lid (Pyrex glass, Le Creuset cast iron, or ceramic)
  • Wooden Spoon or spatula (optional)
  • Plastic wrap
  • Two or three cotton dish towels (not terrycloth)

Directions for this Kosher Recipe

Mix all of the dry ingredients in a medium bowl. Add water and incorporate by hand or with a wooden spoon or spatula for 30 seconds to 1 minute. Lightly coat the inside of a second medium bowl with olive oil and place the dough in the bowl. Cover the bowl with plastic wrap and let the dough rest 12 hours at room temperature (approx. 65-72°F).

Remove the dough from the bowl and fold once or twice. Let the dough rest 15 minutes in the bowl or on the work surface. Next, shape the dough into ball. Generously coat a cotton towel with flour, wheat bran, or cornmeal; place the dough seam side down on the towel and dust with flour. Cover the dough with a cotton towel and let rise 1-2 hours at room temperature, until more than doubled in size.

Preheat oven to 450-500°F. Place the pot in the oven at least 30 minutes prior to baking to preheat. Once the dough has more than doubled in volume, remove the pot from the oven and place the dough in the pot seam side up. Cover with the lid and bake 30 minutes Then remove the lid and bake 15-30 minutes uncovered, until the loaf is nicely browned.

For the whole wheat version, I substituted 2 cups of whole wheat flour for the white flour

For the semolina, I substituted 1 cup of semolina flour (smead) for 1 cup of white flour

For the olive bread, I added 1/2 cup pitted & chopped Alphonso or kalamata olives to the dough mixture just before I let it rise in the towel.

For the garlic & rosemary bread, I sauteed 4 garlic cloves cut in slivers in a teaspoon of olive oil and then mixed the garlic pieces (without the oil) with 2 tablespoons chopped fresh rosemary and added to the dough mixture just before it rises in the towel

Needed for this Kosher Recipe

  • buy pre packaged spring roll paper, cut diagonally to make two large triangles
  • julienne carrots and celery, shredded cabbage, red onion (optional) and basil

Directions

  1. place towards one end of the triangle, and roll, keeping the veggies peeking out from the top.
  2. Pan fry in part sesame oil and part safflower oil till the outside is crispy. (No need to deep fry- the pan frying is more then enough)
  3. use your favorite soy sauce dip- I like Trader Joe‘s Soyaki!
  4. My kids love them. You can also add any shredded or sliced cooked chicken or meat or tofu!!
  5. Be creative- these are super yum and super fun!

Kosher Recipe

  • 1 1/2 C flavored breadcrumbs
  • 1/2 tspn salt
  • 1/4 tspn paprika
  • 1/8 tspn black pepper
  • 1/2 tspn garlic powder
  • 1/3 C light mayonaise
  • 1/3 C spicey brown mustard
  • 6 Tilapia

Directions for this Kosher Recipe

1. In a bowl ,stir together the breadcrumbs and spice .In another flat bowl mix together the mustard & mayonaise

2. prepare a tray with foil and spray with Pam .Heat oven to 375

3. coat fish with mayo mixture and cover in breadcrumbs on both sides .

4.Garnish with lemon slices and bake on tray for 45 minutes

This is the simplest dish but gets the most amazing results. Whenever I make these, the platter cannot leave the kitchen before it needs refilling. This is also a great afternoon snack that keeps the family from munching on sugary sweets before a late dinner.

This is of course a great kosher and vegan recipe for the big Super Bowl event this Sunday February 6!

Plantains have  many health benefits that you may not know. Read on:

  • A well-acclaimed diuretic, plantain is found to be extremely effective against kidney ,bladder and intestine problems.
  • It is  effective against heavy menstrual cycles.
  • Plantain is also used as a vulnerary to treat cuts and wounds. Due to easy accessibility of this wonderful fruit, it can be easily bought and crushed and applied to cuts and wounds for quick relief. Also, since plantain has a high epidermal growth, it can be used to fix damaged tissues, treat bruises and broken bones.
  • Plantain is touted as a wonderful blood cleanser.
  • Plantain, much like its yellow ripe counterpart, is extremely good for skin. Plantain juice can be effectively used to treat sunburn, ulcers, scalds and burns. It is treated as an effective substitute for aloe vera.
  • It is very effective for treating liver sluggishness and inflammation of the digestive tract.
  • Chewing plantain root can offer immediate relief from toothache.
  • Plantain is known to soothe cough reflex andis used to treat asthma, lung infections, and hay fever and any other respiratory disorders that involves mucous congestion.

How to know when a plantain is ready to cook:

Buy plantains as green as possible and allow them to ripen at home near a window.During the winter that can extend to three weeks!  If you want a plantain chip that is not too sweet, (ie. for a guacamole dip) then only allow it to turn yellow. But, if you want a sweeter treat then allow plantains to turn black (the skin will go from green to golden yellow to black). Once they are that ripe, you will know they are super sweet inside.

For this recipe, we recommend the golden yellow color:

  1. Slice Peel 3 plantains, discarding the peel. Cut them diagonally into 1-inch slices.
  2. Spread plantain pieces onto cookie sheet, toss with olive oil, salt, and pepper. Bake at 400 degrees until brown on the outside.

To Fry:

  1. Heat oil in saute pan. Place plantain in oil and fry about one minute, flip, and fry until crisp on both sides.
  2. Dry plantains on a paper towel, and sprinkle with salt and pepper.

For Guacamole:

  • 2 ripe avocados
  • 2 cloves garlic, finely chopped
  • 1 teaspoon lemon juice
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon red hot pepper flakes
  • 1/2 tomato, diced
  • Salt and pepper to taste
  1. Open avocados and pull out all of the fruit with a spoon.
  2. Lightly mash the avocado with a fork as you add the garlic, lemon juice, and spices. You can adjust the spices to your taste. Fold in the tomato.
  3. To serve, put guacamole in a shallow bowl with plantain slices next to it for dipping.

Black Bean Super Bowl Salsa with Tortilla Crisps

Salsa means “sauce” in Spanish and it is usually a condiment made from tomatoes, onion,garlic, cilantro, salt and hot peppers, with a touch of vinegar or lemon juice for acidity. The mixture is usually chopped and served fresh with tortilla chips.

Salsa has tons of vitamin C, plus, it is low in carbohydrates, fat and cholesterol. On average, a serving of salsa has about 15 calories — certainly better than your average mayonaisse based dip.

This recipe has been renamed by family members as SUPER BOWL SALSA-!

Add it to your menu for next Sunday February 6, 2011 for all the football fans that will gather by

the screen!!!

Serve with chicken or fish any night of the week,or as a healthy  snack if your kids and their friends come over to hang out.

Check out the video above from EHOW.com. The tomatoes are cooked, and corn and cumin are added. Obviously, salsa has a lot of variations so you can go with the flow, experiment, and let us know which version your family like best!

Superbowl Salsa

Kosher Recipe Ingredients

  • 6 flour tortillas cut into triangles
  • spray with olive oil cooking spray and sprinkle with sea salt
  • bake for 10 minutes at 350.

For the Salsa

  • 1 can black beans rinsed drained and chopped
  • 1 tomato diced
  • 2 scallions
  • 1/2 cup chopped cilantro
  • 2 tbs lime juice
  • 1/2 tsp sea salt

Combine all kosher recipe ingredients and serve with fresh tortilllas.

“For my best friends birthday, I went all out in MY favorite color with my pink placemats, drinking glasses and my rhinestone glitzy bow napkin rings wrapped in not one- but two napkins. I folded both a white and a pink napkin together to get that perfect shape to fit beautifully into my bows. For her special day , I served spaggheti squash baked ziti, a big hearty salad (every girls favorite) , artichoke bottoms, bruchetta, parmesan truffle french fries and last noodles with pesto. A deliciouse meal brings a smile to everyone :)
