Sweet Holiday Tender Brisket with Red Wine

Here is another kosher recipe to put on to your seder menu.

Brisket, brick roast and minute steak recipes are staples for our Jewish holiday meals. I buy organic brick roast at the Kosher butcher. Hopefully there are less unwanted chemicals and hormones in the beef! This is a quick and easy recipe for Passover.

Brisket Recipe Ingredients:

  • 2 medium shallots, minced
  • 2 cloves garlic, minced
  • 4  teaspoons chili powder
  • 4  teaspoons smoked paprika or Hungarian paprika
  • 2  teaspoons ground cinnamon
  • 2  teaspoons oregano
  • 1  teaspoon kosher salt
  • 4  pounds first-cut brisket
  • ¼ cup red wine
  • 1  cup chicken stock
  • 1  14-ounce can diced tomatoes
  • ¼  cup packed dark brown sugar
  • ¼  cup cider vinegar

Directions

  1. Combine shallots, garlic, chili powder, paprika, cinnamon, oregano and salt in a small bowl. Rub into both sides of meat. Set the meat in a 9-by-13-inch baking dish, cover and refrigerate for at least 8 hours or overnight.
  2. Pour wine and stock over the meat. Cover the pan with foil and set aside at room temperature while the oven heats to 350°F.
  3. Bake the brisket, covered, for 2 hours. Meanwhile, blend tomatoes, brown sugar and vinegar in a large blender or food processor until smooth.
  4. After 2 hours, pour the tomato mixture over the meat; continue baking, covered, until fork-tender, basting with pan juices every 30 minutes, for about 1 1/2 hours more.
  5. Remove the meat from the sauce. Let rest for 10 minutes; then slice against the grain. Skim the fat from the sauce in the pan; pour the sauce over the meat and serve.

I’ve known Lisa Ades now for about 5 years. When I’m not sitting at my computer blogging for The  Jewish Hostess, or taking care of my family, (and maybe doing a little fun shopping), I have the thrilling  job of working with Lisa as we co-produce a couple of  historical documentaries for The Joseph J. Sitt  Sephardic Heritage Museum.

Besides being a top notch filmmaker, Lisa also cooks gourmet meals for her family.

I’m so glad she found a minute to write up her famous kosher Brisket recipe!

Of course this is a perfect  main course for  your Shabbat and Jewish Holiday menus!

Juicy Brisket with Deglazed Onion and Wine Sauce:

    • Buy a 4-5 pound brisket.
    • Sprinkle with kosher salt and pepper and brown it well on both sides in 1-2 tbsp. vegetable oil (canola).
    • Remove brisket and sauté 6 onions, coarsely chopped or thickly sliced.
    • When the onions are lightly browned, add 2-3 minced garlic cloves and sauté for about a minute.
    • Then add ½ can of tomato paste and brown with the onions for a few minutes.
    • Deglaze the pan with about a cup of red wine, scraping up any brown bits, then add a bay leaf and about a quart of chicken stock (the stock should come up to about half way in the pan).  The onions and brisket will give off a lot of liquid.
    • For extra flavor you can add ½ packet of instant onion soup mix. Cover the pan tightly and simmer on a low heat for about 2 hours.  You can also cook the brisket in the oven at about 350.
    • Remove the brisket from the pan and let cool.
    • In the meantime, skim the sauce and then blend the onions and cooking liquid with a hand blender right in the pot or remove to a blender if you want a smooth and thick gravy.
    • Season with salt and pepper to taste.
    • When the brisket is cool, cut off any fat if you wish and slice against the grain.
    • Nestle the sliced brisket in the gravy, cover and cook for about another hour, until it is very tender.   Total cooking time should be about 3 hours.

Thank you Sarah for sending in your “Night in Morocco” themed Rosh Hashanah! WOW!!! I wish I was there!

Sarah created this Moroccan themed evening on Rosh Hashanah  by buying nargilla smoking pipes as props from Kosher Palace on Kings Highway. Always thinking of making her guests feel cozy and right at home, she also somehow found a minute to run to  Canal Street in Manhattan to purchase pashmena wraps which she artfully displayed on the back of each chair. Comfortable Morrocan patterned silk slippers were displayed in a basket at the foot of the dining room table. Moroccan drums and mirrored trays on this fabulous Rosh Hashanah table completed the holiday decor. Thick candles and Moroccan inspired candlesticks topped off the festive Jewish New year.

This is one table that will inspire us all to make our Jewish  holidays fun AND memorable! Thanks again for sharing your evening with us, Sarah!

Heavenly Cheese Samboosak

Mother’s Day and Shavuot  would not be the same  in a Sephardic Jewish household if we did not serve samboosak as a side dish on the table.

Many people even serve it with the dessert and coffee or tea at the end of the dairy meal.

A bag of frozen unbaked  sambousak is considered like “gold” because of the loving handmade touch of each delectable crimped half moon pastry.

Remember to always keep a bag of frozen samboosak in the freezer for an unexpected guest!

Ingredients:

Dough:

  • 2 1/2 cups of flour
  • 1/2 cup of smead- (semolina flour) available at Bob’s Red Mill
  • dash of kosher salt
  • 2 sticks of melted butter
  • 1/2 cup water
  • 1 tsp oil

Cheese Filling:

  • 1 lb. low fat mozzarella cheese, grated,
  • 2 eggs beaten,
  • 1/2 tsp  aluminum-free baking powder.

Egg Glaze and Sesame Seeds for Topping:

  • one beaten egg in a small bowl for dipping sambousak.
  • 3/4 cup sesame seeds mixes with 1/2 tsp of kosher salt.
  1. Mix flour, semolina and salt. Add butter , add water and oil slowly.

(Can be kneaded by hand, but I like using the metal blade of the food proccessor.)

  1. Refrigerate dough for 20 minutes.
  2. In a glass bowl, mix grated cheese with  aluminum-free baking powder and eggs .
  3. roll the dough into walnut size balls.
  4. flatten with tortilla press or your palm
  5. place a teaspoonful of cheese mixture into the circle
  6. fold over and crimp, starting at one end, rolling the dough between your thumb and forefinger and pinching as you turn the half moon. It takes practice!
  7. dip half moon into beaten egg, and then into sesame seed mixture.
  8. place on sprayed parchment on a cookie pan.
  9. May be frozen on a tray at this point. Place in a freezer bag when frozen. or-
  10. bake at 350 degees for approximately 20 minutes.
  11. Done when bottom of each sambousak is a light brown and top is perfectly baked.

Inspired from my trip to Paris last year – I wanted to serve all the food in individual portions Not being able to  find the right table cloth, so I went to the fabric store and bought a black leather cloth and made a runner from that black and white fabric. I happen to love inspiring messages, so each Eiffel tower place card holder  had a word printed on it – happiness, gratitude, honor, love grace etc … and each card also the guest’s name on it.

I found butterflies at Kitchen Caboodles and placed them on my napkins.
Mirrors were used as chargers.
I set up the food in the kitchen on display boxes with mirrors And I also bought lamp posts online to create the Paris street setting.
I also got the individual ramekins from kitchen caboodles and the martini glasses and large glasses for salads.

WOW!! What a gorgeous holiday table!!  If you are looking for elegant table setting ideas then you’ve come to the right place! Viviane’s flair for color and style is evident with the effort that she put into her Rosh Hashanah table. Shades of the color purple are associated with royalty, wisdom, and mystery in which the flowers, dishes, placemats and stemware add the extra touch of sophistication to the table.

 I love how she so cleverly used  Kim Seybert napkin rings as a backdrop for printed place cards for her guests! And the individual simanim for each family member! What a cool idea! Love it! I’m sure adults and children alike went home with wonderful holiday memories that reflected the effort and thought that went into this special holiday table setting. “I got my idea online from a Chinese hostess website. I bought the spoons from a restaurant warehouse and the plates underneath from CB2. I went to Paper Moon Invitations on Avenue P and had them print up the cards with each beracha. Then I went to Lana fabric on Kings Highway and bought organza plum ribbon and tied each one to each spoon. Every person got their own plate with their own spoons and simanim. What a nice night! Viviane”

My neighbor Miriam is a beautiful woman inside and out. Her glowing personality is evident with every greeting, smile, and hug that that she gives with the utmost generosity. Miriam’s vivid and deeply hued table top Mexican themed dinner table decor instantly put her holiday dinner guests in a festive mood, and these pictures make me happy every time I look at them! These fiesta themed dinner  table top photos are truly beyond words, and I am so happy to present it to my Jewish Hostesses!

Miriam used Mexican blankets as her table runners, and scattered gloriously striped Mexican pillows among huge fruit and flower filled champagne glasses as her ingenious centerpieces. Her dining room table served as a buffet table as the huge doors behind beckoned her guests to the fabulous Sukkah that was built as an extension to her home. Thank you Miriam for sharing your fabulous Mexican themed Sukkkot dinner party with us!

Challah is truly a labor of love that I had the opportunity to experience when I told myself that if I actually ever won a Bosch mixer at a Chinese Auction, I would attempt this grand feat. Miraculously I did win, and I’ve been making my own ever since. I’m so glad that I found this video of Hadassah Sabo Milner braiding a six strand challah which really comes out so much prettier than the traditional three braided challah. This video wins every other one on the ‘net- I watched them all and picked the best one for us all to share. Thanks Hadassah!

There is really nothing better than the feeling of actually making your own dough, watching it rise, punching it down, braiding, brushing egg on top, separating some dough for the prayer, saying the hafrashat challah prayer, baking,cooling, warming it  before kiddush,  setting the challah on the table with a challah cover, saying hamotzie, dipping in salt (or sugar on the Rosh Hashanah table) and finally  watching the head of the rip off pieces (Syrian tradition) and throwing them in age order to each family member to FINALLY watch everyone gobble it  up. (WHEW!)

Whole Wheat Honey Challah Ingredients:

  •  2 strips of yeast
  • 4 cups of warm water
  • 1 cup plus 1 tbsp sugar, divided
  • 3 heaping tbsp coarse salt
  • 8 cups white flour
  • 8 cups whole wheat flour (note- I believe that the MDY cookbook has a misprint here- the book says 4 cups)
  • 4 eggs
  • 1 cup cold pressed safflower oil
  • 1/4 cup honey
  • grease for the bowl
  • egg white to brush
  • sesame seeds, zaatar or everything spice for topping
  1. Mix yeast with warm water ( first mix the 2 cups of boiling water with 2 cups of ice cold water in the bowl, then add 1 tablespoon of sugar and then yeast)
  2. In a Kitchen Aid combine 1 cup sugar, salt, flours, eggs, honey, and oil. Mix and then add yeast mixture for 10- 12 minutes.
  3. Transfer to a large greased bowl and cover. Set aside for an hour.
  4. Remove dough and braid in 3 or braid a 6 braid challah for a prettier and more evenly cooked challah. If you family likes a doughier challah then stick with the 3 braid.
  5.  If you are adding raisins for Rosh Hashanah then rollout your braids in a long, flat shape, add raisins and  then roll into a log. Soaking the raisins in warm water first helps to make them softer and fluffier.

  6. Brush challah with egg white, add topping.
  7. Bake in a preheated oven for 10 minutes, turn the tray or switch racks for another 10 minutes.
    Variation: Braided Round Challah:An easy way to make nice, round, braided challahs  for Rosh Hashanah is by taking three long strands and braiding them into a very long braid shaped log.After this has been braided, carefully tie it up as if you are making one large knot out of it, and leave it to rise.Related articles

For all of you that may not know Linda, she is the ultimate Jewish Hostess entrepreneur who started her business career in the 80′s designing and selling gorgeous stone encrusted angora sweaters to major department stores all over the country. Of course since we were getting wholesale prices, I do believe that my mother was Linda’s best customer at the time, shlepping us girls into Linda’s basement to try on the stunning line of knits. Linda advised my mom to preserve the fuzzy angoras in a cold area. I think that dozens of  Linda’s sweaters must still be frozen solid in the deep freezer that is in our old house on the corner of Bedford and J…..

In the summer of 2011, the Table Set GO event in Deal, New Jersey (sponsored by the Morris I. Franco Community Cancer Center) showcased the communities’ women’s striking table decor talents. Each table represented a unique Jewish holiday ‘s theme. The botanical holiday of Shavuot was displayed by Barbara Chehebar, Ruthie Bibi, and Adele Pardo. This table decor’s shades of blues and purples heralded the arrival of Shavuot’s custom of decorating one’s home, the synagogue and even the Torah scroll itself with greens and flowers in honor of the holiday. This custom of flowers and greens was based upon a statement in Midrash that the foot of Mount Sinai (where the Jews stood in awe, awaiting the granting of the Torah) was carpeted with greens and sweet smelling flowers.

To accent the Shavuot table’s floral decor and centerpiece, the girls used Kim Seybert napkin rings, geometric Pucci scarves, sky blue bordered china dinnerware, and sparkling crystal stemware. Delicate blue dotted quilted linens were the backdrop to this elaborate variety of sweet smelling Shavuot florals. Mini Torahs and two mountains of roses, represented the giving of the Torah at Mount Sinaii. Thank you ladies for all of your hard work, table setting ideas inspiration! I’m so glad that we have the photos to remember this stunning event!

It Couldn’t have been done without the help of party planner Yvette Hanan she really is amazing at what she does. As for desserts, bakers Shirley Mamiye and Mari Gindi made individual brownies, napoleons, cupcakes, tiramisu, sugar cookies and more… The marzipan desserts featured in this pic were all custom ordered  and brought in by my family from Panama. Thank you Joy Betesh for sending in your grandma’s recipe for kanafe. I LOVED watching this video because that was exactly how MY grandma spoke!!! The EXACT accent!!!! And the Syrian BANGLES!!!!!  MEMORIES!!!  (Please note- when the video is completely edited Joy will send it in for us to view but enjoy these couple of minutes with her grandmother!!!)

“Hi Marlene, Here is my Grandma Abadi’s recipe for Kanafe. I submitted it to Food 52 and it was an Editor’s Pick! In 1985 I videoed my Grandma Abadi and Grandma Rahmey making Kanafe and also interviewed them about their lives. In 1995 when my son was bar mitzvahed my mother made the kanafe and referred to the video for the recipe. Two months ago, for my grandson’s Bris I made the Kanafe, and watched the video , too!

Kanafe is the most heavenly Syrian Dessert….the combination of the ricotta cheese, buttery crispy shredded wheat  and the fragrant rose and orange blossom water syrup makes me swoon.This knafe recipe is unique because cream of rice cereal is used as a lighter alternative to heavy cream. I submitted it to Food 52 and it was an Editor’s Pick!

This is my grandmother’s recipe and I videoed her making kanafe in 1986. Ten years later, my mother wanted to make Kanafe for my son’s Bar Mitzvah and we did not have an accurate recipe…so we popped in the video and was able to capture Grandma Abadi’s recipe and her technique! Now I have prepared the Kanafe and will bake it next week in honor of the birth of my grandson!” – Joy Betesh

SERVES 12-14

For the kanafe:

  • 1 pound kanafe (shredded phyllo dough)
  • 2 1/2 pounds ricotta cheese
  • 1/2 cup cream of rice cereal
  • 3 sticks of sweet butter melted
  • 4 tablespoons sugar
  • 1 tablespoon rosewater
  • 2 cups milk
  • 1/4 cup pistachios, peeled & chopped

For the Syrup:

  • 2 cups sugar
  • 1 cup water
  • 1 teaspoon rosewater
  • 1 teaspoon orange blossom water
  • 1 teaspoon lemon juice
     

  1. Drain the ricotta in a strainer. Prepare the cream of rice according to the box directions using the 2 cups of milk, add the 4 Tbsp sugar and the rosewater. When the cream of rice mixture is cool add the ricotta and mix well.
  2. In a large bowl shred the kanafe with your hands, tearing apart the strands of dough so there are no clumps. Mix in the melted butter, continuing to shred the kanafe till it is well coated with the butter.
  3. Spread 1/2 the kanafe in a 9 x13 pyrex or large pan. Press down firmly and press the kanafe 1/2 way up the sides of the pan. Add the ricotta mixture, spreading evenly over surface. Top with the other 1/2 of the kanafe. The kanafe may be frozen up to this point.
  4. For the syrup, bring the sugar, water and lemon juice to a boil and then simmer for 15 minutes. Add the rosewater and orange blossom water. This syrup may be made ahead and refrigerated.
  5. Bake in a 350 oven for one hour or till golden. Pour the cold or room temperature syrup over the hot kanafe. Garnish with the chopped pistachios. Serve warm or at room temperature.

“My sister loved  feathers, so we tried to incorporate the colors of the invitation, which was pink and black, and make it an elegant night out for the ladies who came. We draped the tables with black table cloth and pink organza on top. On the dessert table we created the illusion of floating plates. We stacked square mirror chargers over glass cups to look like it was floating and flooded the table with rose petals. On the table we also put two black vases which we draped with pink beads and topped with feathers. Nellie Esses”

This beautiful Passover Seder was styled by Marjaneh from Candybar Couture with lots of help from her mother Guity. Although, Passover is a Jewish Holiday celebrated for thousands of years, this family who is originally from Iran, took a very modern approach to designing the party. The party was held at the Huntley Hotel in Santa Monica. The second floor patio that was covered halfway by a beautiful white tent that was the ideal location to seat more than 70 guests. It is very common for Iranians living in Los Angeles to have a large number of guests at the Seder. They invite friends and lots of extended family. A microphone had to be used for all of the guests to hear the prayers!

The food that is used for the prayers, along with flowers were used as the centerpiece.

They included lettuce, bitter herbs, Matzos, vinegar and Halegh which is the Iranian version of Charoset. The highlight of the nigh is generally Dayenu where it is customary for Iranian Jews to playfully hit each other with the raw scallions. This tradition symbolizes the whips of the slaves in Egypt.”
