The Jewish Hostess Macaroon Menorah Hanukka Table RECAP

Last year’s Hanukka , I wanted to try to be a little different than previous years, and I also KNEW that my table had to be unique being that my kids put the “Jewish Hostess” pressure upon me. Loving how macaroons have been in the forefront of “dessert style” lately, I brainstormed with Leila Akaad of “La Magnifique Macaron”  famous for her fantabulous homemade macaroon displays, we dreamed up a Macaroon Menorah in which she would create an ombre of blue macaroons in 8 plus 1 lucite canisters and we would display it upon a lucite bow that was 3 feet wide and 4 inches high. Under the box I placed some mirrored squares from Ikea and atop that I scattered some sparkly blue and silver dreidels.

Atop each pacesetting was a gorgeous blue glass dish (if you are interested in purchasing please contact me marlene(at)thejewishhostess.com), an IKAT cotton napkin, in which I folded a blue velvet ribbon and placed an “M” squared Hanukkah coaster. (it looked better on the napkin than set as a coaster- as I always say- you DON’T always have to follow the table setting “rules”!)

 

I then placed a cake pop with a hand calligraphied name tag (designed and baked by the talented Mari Gindi) for each guest in front of each plate as a place card holder.

 mercury glass vases, Hanukka dishes, and festive mercury glass votives. I love West Elm as a Jewish Hostess resource center because that always add a Jewish touch in the midst of all the Christmas Holiday decor, not making the Jewish Hostess feel like an alien in a red and green table setting decor of a  whirlwind shopping season. They even had a whole HANUKKAH category on their website!

Wine tags added to the festivities as everyone took home a kosher wine bottle as a special hanukka gift. The lucite trays are a gorgeous addition to any table. Please contact me if you are interested in scooping up one as a gift or for your self……

 

Besides Bingo, and some activities whipped up by the kids, we placed Lottery tickets under each plate. The grand winner won $17!!!!

All in all it was a great Hanukkah night. I am grateful that I am able to share a beautiful table with my wonderful family and FABULOUS JEWISH HOSTESSES.

This is a great  gluten–free recipe to serve on Mother’s Day. I made it this week for Shabbat lunch. Thanks to Paula Shoyer for sending it in to The Jewish Hostess. Check out her new book “The Kosher Baker.”
I added fresh corn to this salad.

serves 8

  • 1 cup quinoa, rinsed
  • 1/2 cup fresh corn
  • 1 medium sweet potato, cut into ½ inch cubes
  • 6 tablespoons extra virgin olive oil, divided
  • 1/3 cup pine nuts, toasted, optional
  • 3 teaspoons apple cider vinegar
  • 2 teaspoons honey
  • ¼ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 1 teaspoon ground cumin
  • 1/2 teaspoon cinnamon
  • 1/3 cup dried cranberries
  • 3 scallions, sliced thin

Directions

Preheat oven to 400ºF. Place the quinoa into a small saucepan and add 2 cups of water. Bring to a boil and then simmer for 15 minutes, covered, or until the water is evaporated. Turn off the heat and let quinoa sit covered for at least one hour, up to 8 hours.  While the quinoa is sitting, place the sweet potato cubes into a roasting pan and toss with 2 tablespoons of the olive oil. Bake for 25 minutes, stirring once or twice, or until you can just pierce the cubes with a fork. Set aside.

Place the pine nuts into a small pan over medium heat and cook until lightly toasted, stirring often. Watch carefully so they do not burn. Set aside.  In a small bowl, place the remaining two tablespoons olive oil, vinegar, honey, salt, pepper, cumin and cinnamon. Whisk well.

When the quinoa is dry, use a whisk to break apart the grains. Add the vinaigrette and mix with the whisk. Add the sweet potatoes, pine nuts, cranberries and scallions and mix gently. Serve at room temperature.

Jewish Hostess Brick Chicken Pargiot

Pargiot chicken is an Israeli term for a young chicken, or a boneless chicken thigh. In this recipe, Francine Sutton Aronowitz make sure to pack all the flavors of her juicy chicken Pargiot by sealing it under a weighty foil wrapped brick. If you would rather not have the tin foil mingle with your chicken as it cooks, you can always place a heavy cast iron skillet atop your chicken and then layer your brick on top. Thanks- Francine!!!

Ingredients

  • Chicken pieces
  • Olive Oil
  • Your Favorite Spices
  • Pam
  • 2 Bricks

Instructions

  1. Pour some olive oil into a bowl and sprinkle your favorite spices (I use garlic powder, onion powder, kosher salt, blk pepper, turmeric, cumin, and paprika).
  2. Mix all spices with the oil to form a paste-like substance
  3. Place your chicken pieces in it, making sure to smother them completely
  4. Allow chicken to marinate in fridge for a minimum of 3 hours-overnight
  5. Take 2 large bricks and cover them with heavy foil paper
  6. Heat up your griddle and spray with Pam
  7. Place chicken pieces on griddle and place bricks on top to cover chicken pieces for 4 minutes
  8. Carefully remove bricks and set aside while you flip chicken pieces
  9. Place bricks back on for another 4 min
  10. Remove chicken and put in a tray or Pyrex and cover immediately with foil to seal in the juices
  11. The bricks flattens the chicken pieces allowing them to cook more evenly and keeps all the juices in. Enjoy!!

S’mores Brownie Bites

“Hi, its Shirley from Homebaked, and I’d like to share a fun, easy recipe that is great for topping off any meal. While I make these bite-size treats with my favorite from-scratch brownie recipe, you can simply use a box of Duncan Hines Chewy Fudge Brownie mix (with a little extra chocolate chips) with equally scrumptious results.”

Smore’s Brownie Bites

(makes about 48 mini brownie cups)

Graham Cracker Crust:

  • 1 ½ cups crushed graham crackers
  • 6 tbs melted margarine

Brownies:

  • 1 box of Duncan Hines Chewy Fudge Brownie mix
  • ¼ cup water
  • ½ cup vegetable oil
  • 2 large eggs
  • ¼- ½ cup chocolate chips

Topping:

  • Mini marshmallows
  • Marshmallow Fluff

Preheat oven to 350.

Spray mini muffin trays liberally with cooking spray. (You can also use regular size muffin trays, but baking time will be longer, and you will probably get about 15 cupcakes out of the recipe).

To make crust

Simply mix the crumbs and the melted margarine together by hand. Drop about a teaspoon of the crumb mixture into each sprayed muffin cup. Using the back of a knife (or your fingers), carefully press the crumb mixture down until each cup has a flat, compact cookie crust at its bottom. (Save any leftover crumbs, as you will use them for on top of the brownies). Bake the crusts for about 3-5 minutes.

For the kosher brownies

Combine the brownie mix, water, eggs and oil together in a large bowl. Mixing vigorously until you have a smooth, shiny batter. Add the chocolate chips and mix to combine.

Drop the brownie batter by the spoonful into the muffin trays on top of the baked crusts. Don’t be afraid to fill the cups to the top, as these brownies rise little while baking. Sprinkle each brownie with remaining graham cracker crumbs.

Bake for 10-13 minutes. Brownies should have a nice domed top and crackly top, and a toothpick inserted into center should come out with a few moist crumbs. (Just be careful not to over bake these… you don’t want hard brownies! If you are not sure if your brownies are ready, take them out a bit before they seem to be fully baked).

Let brownies cool in pan before carefully removing each one with a sharp knife.

To finish

Using a tiny bit of marshmallow fluff as glue, simply adhere 3-5 marshmallows to the top of each brownie. You can leave the brownies like this, or you can toast the marshmallows with a kitchen torch for a true campfire feel. Top with cinnamon.

Dear Hostesses, I know that your are all thinking that I am the one responsible for this magnificent jungle themed table, but no, I must admit- all of the credit goes to my official partner in crime, my sister in law A……Mamiye. About two weeks ago, she graciously invited my family over for a Purim Party Seudah, and thrilled to be let off the hook, I quickly accepted.

A….. always puts extra effort into her Purim Party theme and  literally involves every member of her family into the fun of the holiday. One year she came to my door dressed as the wicked witch, with themed mishloach manot in hand, and each kid (plus my brother in law) was in tow as another member of the Wizard of Oz family. (I was told  that if I posted the pictures, I would be excommunicated). Another fun year she made us all dress up in 80’s garb and I had a great time exhuming my old favorite lime neon green shoulder padded short jacket (the matching mini-mini skirt wouldn’t zip), and I blew off the dust from my beloved 3 inch hanging gem encrusted  gold costume earrings (why I still have all that stuff, I do not know). I PUFFED up my hair, and tried to replicate my  Stagelight blue eyeshadow (who remembers Blue Roses sticky lip gloss?). ( If this era applies to you,  click here and reminisce with fads from the 80’s). Anyways, Allegra treated us all to a whole 80’s experience that Purim holiday, including an entire homage to Rick Springfield and his music. (ahem).

 Fast forward to Purim 2012- Knowing that we would have to spotlight this holiday table on The Jewish Hostess, we quickly began to brainstorm.  An adventurous sarfari theme came to mind and we got to work. Digging into both of  our  storage closets, we dug up anything and everything that was wood, orange, green, exotic, and bright. Within three minutes my niece was at my door ready to pick up my tropical finds.

A….. went to work on the computer and in her own words “‎​Got the bandana’napkins’ and the hanging balls and animal print bags from Oriental Trading. Dirt cheap. Got the ‘bambu’ disposable plates from Paper goods. All the rest is yours and my stuff dug up from the archives!”

A….. spent the next two days singlehandedly setting up her table, and  so excited with how it was coming out, she called me at midnight to come check it out. 

Twenty years ago A….. and I used to dream of running to Bergdorfs, but now all we were thinking of was when we could find a minute to run to the flower market for some brights  that would polish off the table. We finally got there yesterday, parked illegally and within 10 minutes we had acquired a bunch of beautiful vines, leaves, and exotics, plus, of course, a parking ticket.

I ran to the fruit store (this was the one day of the year that Ouri’s didn’t have baby bananas!) and I grabbed some mangoes, kiwis, oranges, and pineapple, brought it to her house dumped them into our wood bowls, and within three minutes we were ready for photographer Gary Zindel to snap some photos.

Yeshivah Bakers Jewish Holiday Cupcake Wars, 2011- Re-Cap!

On Wednesday, November 16,  the Sephardic Community Center hosted hundreds of community women to gather and soak up  the talents of the celebrity bakers that reside within the Syrian Jewish community. Never before have all of our expert “Jewish Hostesses” mommy bakers gathered  in one place for a friendly fundraising competition.

This day of unity featured the creative baking expertise of six teams consisting of 2-3 yeshiva moms, each team representing a different community school.

Each team was given a Jewish holiday theme (which was chosen at random), in which they had to create a cupcake from scratch that represented that theme. I was lucky enough to be chosen as a one of the judges (I think I gained about 3 pounds that day- but it was SO worth it!!!!) for the competition, along with Claudia Bildiricci (of the famous “LOTTIE BISCOTTI”) and Katy Zanville of Sprinkles Cupcakes, NYC.

The clock struck at 12:15, and  the girls  flurried about in organized precision, rolling, baking, fitting, topping, and assembling their cupcake themed displays.As their masterpieces began to take shape, you could hear the “oohs and aahhs” among the crowd of amazed women. In 90 minutes they would  be judged by their creativity, adherance to the theme of the holiday, and deliciousness of their cupcakes.

While the bakers were hard at work, the hungry audience was ushered into a fabulous lunch bar that was catered by A Kosher Affair. A gorgeous turquoise themed chinese auction full of tempting gifts for every Jewish Hostess had tons of  tickets stuffed into each box, each one awaiting a lucky winner.

Though these events seemingly fall into place SO easily, we all know that it takes women like  Lisa Elo and Linda Sasson who can defy the conventional. and pull a monumental gathering like this  together.  Another thanks to our MCs for the day- Gail Mizrahi, Lynda Levy, and Linda Sasson.

I wish that I could have uploaded ALL  of the gorgeous pictures taken by Mark Greenberg that day but the pics below were the best ones!

And NOW……. for the CUPCAKES!!!!!

Passover By Hillel Yeshivah bakers was displayed as a petite seder plate atop a silver star shaped dish. The girls created their very own mini gold pillow, wine cup, celery dipped in salt water and charoset out of home-made modeling chocolate. The cupcake was a unique fleur de sel “red”  velvet (representing the river of blood on Passover!) cupcake with yummy coconut cream cheese frosting (get it? Cream cheese on matzo….) Great Job, Girls!!!!

Barkaii Yeshivah bakers displayed a fabulous Achashverosh Crown shaped vanilla vodka (for the liquor on Purim….) flavored cupcake. The filling had a tinge of whiskey flavor which added to the authenticity of this delicious Purim dessert. The clever use of the upside down champagne glass, the mask, and fondant megillah really amazed the crowd!

The Yeshivah Derech Eretz yeshivah bakers really captured the spirit of Simchat Torah by using fun filled ingredients like home made caramel, a peanut butter frosting, chocolate, M and Ms and nuts. Hand made steps leading up to a torah  hid their surprise candy cupcake. Thank you girls for sharing your  wonderful talents with us!

Magen David Yeshivah’s glamourous hand made menorah and fondant candles spread Happy Hanukah vibes throughout the crowd. Gleaming handpainted chocolates and fondant soufganiyot graced the mirrored tray and  looked too good to eat!  The “present themed” cupcake was actually a scrumptious jelly doughnut cupcake- I hope that the  Magen David bakers will share this Hanukah cupcake  recipe with us! Thank You, girls!!!

 

And now for the talented  Shaare Torah Sukkot bakers! This unique vanilla date cupcake (dates representing the lulav, which grows on the date tree) was filled with a citrus curd flavored with etrog zest and etrog liquor . The topping was a light meringue frosting that symbolized the clouds that Hashem protected us with in the desert (WOW!). The whole intensely flavored cupcake was enclosed in a star (that we see through the bamboo sechach) cutout cupcake holder and sat atop a mini  bamboo Sukkah.

Candied tangy etrog peel dipped in chocolate sat aside a shot of fizzy etrog liquor. (as a judge, I admit to drinking a shot in the middle of the day. For those of you who know me, they will tell you that I wasn’t that much more fun…) The whole modern Sukkot ensemble was so enjoyable to view as well as to eat…. Thank you girls for all your hard work!

This jewel toned  Rosh Hashanah ensemble was cleverly designed with several rounds of tree bark that were layered atop each other for a three dimensional , natural look. Apples, flowers and hand rolled and painted bumble bees really evoked that festive Rosh Hashanah holiday season. Apple cinnamon cupcakes filled with a cozy apple pie filling was topped off with cinnamon honey filled cream puffs and drizzled with caramel. Served with vanilla ice cream, this dessert really took the cake and was voted as the winner of $2600 for The Yeshivah of Flatbush! Mabrook to all the girls for a job very well done!!!

G’mar Hatima Tova!

 I love your website!  It is so inspiring!  Half the fun of the holidays is decorating the table to get the WOW reaction! I have sent along some pictures of my Erev Rosh Hashana Table.   I had individual square white plates with little flower cups of honey and alternating red and green apple slices with pomegranate seeds sprinkled over them. Everyone had a white and gold cocktail napkin underneath at counter angles to the plate so just the corners peaked out. I also had 2 honeycombs on a typical apple platter and sprinkled them with pomegranate seeds, apple slices, real flowers and sugar bees. So they didn’t get lost on the colourful tablecloth, I put them on a white platter. 

 The table cloth is a black background with swirling rich autumn colours of gold, reds, yellows, greens and oranges in apple clusters and vine motifs. I have it in two sizes so both tables were the same.  Since I only had 16 napkins and 17 guests that night, I had to go to white and gold paper napkins.  On both tables,  I had small vases with mixed miniature roses of yellow, red and orange which I bought the day before so they all had opened up already. 

 I have several silver-plated pomegranates that I use in different ways each year – this time I displayed them on a low white platter with mixed small and large realistic-looking plastic fruit (Pottery Barn).  Not pictured here is the Lemon Poppy Seed cake that I make each year in the shape of a beehive, decorated with sugar bees – I had a line-up for seconds for it!  I got the sugar bees from a local bakery (50 of them)!

Also not pictured, but really cute were the one-bite lemon poppy seed cupcakes that I took to a first day luncheon.  I decorated the tops with a little swirl of icing and every third one had a sugar bee.  I served them on a distressed 2 tier rectangular serving platter and it was quite the hit both in presentation and taste!

It Couldn’t have been done without the help of party planner Yvette Hanan she really is amazing at what she does. As for desserts, bakers Shirley Mamiye and Mari Gindi made individual brownies, napoleons, cupcakes, tiramisu, sugar cookies and more… The marzipan desserts featured in this pic were all custom ordered  and brought in by my family from Panama. “My sister loved  feathers, so we tried to incorporate the colors of the invitation, which was pink and black, and make it an elegant night out for the ladies who came. We draped the tables with black table cloth and pink organza on top. On the dessert table we created the illusion of floating plates. We stacked square mirror chargers over glass cups to look like it was floating and flooded the table with rose petals. On the table we also put two black vases which we draped with pink beads and topped with feathers. Nellie Esses”

Coconut Date Truffles

I decided to add a twist to the Almond Date Truffle recipe that I posted  last week. This Shabbat  afternoon I kept telling myself that they are totally natural and have no sugar at ALL….. they were so good with a cup of tea…. I wont tell you how many of these delicious treats I ate, but I can assure you that I will be in the Spin room at the gym bright and early tomorrow morning!!!

They are so easy to make. The whole recipe took about 12 minutes to put together and of course needs no baking. Great for Rosh Hashanah, Tu Bishvat, Passover, and all year round!! Gluten Free!!!

Kosher Recipe Ingredients

  • 1 cup pitted dried dates
  • 1 cup chopped  almonds
  • 2 tablespoons honey
  • 1/2 teaspoon of cinnamon
  • 1/2 teaspoon Amaretto (optional)
  • 1/4 cup of unsweetened coconut

Directions for this Kosher Recipe

  1. Grind almonds in a food processor until finely chopped. Transfer to a baking sheet and toast in oven for 5 to 7 minutes, until fragrant  and slightly darker.
  2. Place the dates, almonds cinnamon, and honey in a food processor.  Pulse the processor until the mixture comes together to form a ball.
  3. Form cherry-sized balls out of the mixture and roll them in  coconut to coat.  Enjoy them right away or store them in the fridge for later!

As some of my Jewish Hostess readers may know, I am involved in interviewing many elders for The Sephardic Heritage Museum which has really  forced me to think about what  memories my kids will take with them as they go on with their own lives.  Many of the elders that we interviewed, recalled great anticipation for Tu B’ishvat during their childhood in Syria. They all reminisced about how their mothers would sew them a cloth bag with a drawstring, and their parents would collect  treasured “exotic” fruits such as pineapples and grapefruits, and Syrian pastries until giving it to them on the  day of Tu Bishvat. Kids would savor their treats, and share and trade with friends for weeks afterwards. Can you imagine this year, Tu Bishevat 2012, handing your kid a home-sewn velvet bag filled with kiwi, papaya and almonds????? lol-  this year, a baggie with some fruit rollups and apple sour sticks just might do the trick!

Growing up in Brooklyn, in the 70’s, my friends and I still joke about the the inedible rubbery brown carob stick that they used to dole out to students on Tu B’shevat at The Yeshivah of Flatbush. Well, I can just imagine my kids tossing that carob right into the trash can if I tried it on them today!

As my quest for a modern day Tu Bishvat continues, here’s a list of some holiday ideas to try with your kids. Use your imagination and send in your great ideas and traditions to me so that we can all share it on The Jewish Hostess:

1- Watch the video above to appreciate the beautiful flowering country of Israel. When you are done watching, You may just book a one way  ticket to Israel!

2-Rebuild trees burnt in Fires in Carmel, Israel Since Tu Bishvat  calls for the renewal of nature, what better way to teach kids how to reach out to others in time of need?

Tzedakah via internet. Perfect for kids with short attention spans!

3- Grape Juice Sangria-

Let your kids pick out which fruits they like and let them help chop and mix.

 

Grape Juice Sangria

  • 1 medium bottle of kosher grape juice
  • 1 cup pomegranate juice (optional)
  • 1 cup orange juice
  • ¼ cup lemon juice
  • 1 pear cubed
  • 1 apple cubed
  • 1 orange pith removed and cubed
  • 3 cups carbonated  plain or lemon-lime beverage
  • 1 cup of red grapes cut in half

Mix all ingredients in a pitcher and refrigerate for several hours. Be creative but only use the fruits that you know your kids will like! Serve in your prettiest fruit cups.

4- Make Tu B’shvat Pomanders out of fresh oranges . Use these decorative balls as centerpieces in a bowl on your breakfast table. Creative Jewish Mom has easy projects for your creative kids.

5-Does you kid love  the combo of sticky wood and glueMake a Fruit Crate and display it on your dinner table with a bunch of grapes, some dates, and a cut up pomegrante. What a centerpiece! Click HERE for easy instructions.

6- Connect with nature right in your kitchen and plant a seed in an egg shell. Or learn how to easily plant apple,  orange, grapefruit, tangerine or lemon seeds HERE. Planting a seed teaches kids patience and responsibility in our modern day world of instant rewards.

7- Make your own flowering dried fruit sculpture with the kids- they will feel so proud to leave it out all week on your family dining table!

“Hey Marlene! I have a great recipe for you, this is my Moroccan style stew with chickpeas butternut squash and fire roasted tomatoes. I made this last week for dinner and served it with grilled chicken and whole wheat couscous. It is a filling and healthy dinner I know you will love! (keep in mind I added my spices without measuring and those measurements should be adjusted to taste) “- Paulina Ashkenazi

Kosher Recipe Ingredients

  • 1 small butternut squash cubed
  • 2 garlic cloves minced
  • 1 small onion chopped
  • 3 celery stalks chopped
  • 6 baby bella mushrooms chopped
  • 2 tbsp olive oil
  • 12oz can of chickpeas
  • 8 oz can crushed tomatoes (I used ‘Muir Glen organic fire roasted tomatoes’)
  • 1/2 tsp cinnamon
  • 1 1/2 tsp allspice
  • 1 1/2 tsp cumin
  • crushed red pepper flakes to taste (optional)
  • 1 bay leaf
  • 1 cup of vegetable broth or water

Directions for making this Kosher Recipe

1 . Sauté first 6 ingredients with some salt until soft

2. Add chickpeas, tomatoes and spices until the juices from tomatoes start bubbling

3. Add broth and let simmer for 30 min, if it becomes too thick add more broth/ water

4.  Remove bay leaf and finish with handful of chopped parsley

Serving Instructions

Serve with couscous or rice

Delicious with grilled kosher chicken or fish for a hearty and healthy meal!

My cousin Sharon sent me this great  recipe a couple of months ago, and I decided to dig it up from the archives because so many of The Jewish Hostess readers loved it.Its so perfect for anyone looking for a last minute low sugar, healthy dessert for Shabbat. Serve with any flavor parve ice cream or Tofutti.

I made this for Shabbat two weeks in a row because everyone loves it so much, not so sweet and not so much oil.  This recipe is small (a 9X9 baking pan) so I made it larger, doubling the recipe exactly and it worked well in a 3 quart pyrex.  It gets cut into squares and served in a platter so the pyrex works well.

HEALTHY BLUEBERRY CRUNCH

1 ½ CUPS OLD FASHIONED OATMEAL

½ CUP WHOLE WHEAT FLOUR

½ CUP CHOPPED ALMONDS OR WALNUTS

1/3 CUP OIL

¾ CUP PURE MAPLE SYRUP

1 PINT FRESH BLUEBERRIES,, WASHED AND STRAINED

2 ½ TABLESPOONS CORN STARCH

¾ CUP COLD WATER

How to Make this Kosher Recipe

PREHEAT OVEN TO 400 DEGREES

IN A MEDIUM SAUCEPAN PUT THE BLUEBERRIES WITH ½ CUP OF THE MAPLE SYRUP.  BRING TO A BOIL.  DISSOLVE THE CORNSTARCH IN THE COLD WATER AND ADD TO THE BLUEBERRIES.  COOK OVER MEDIUM HEAT STIRRING CONSTANTLY FOR A FEW MINUTES UNTIL IT THICKENS.

IN A LARGE BOWL MIX THE OATMEAL, FLOUR, AND NUTS.  IN A SEPARATE CUP WHISK THE OIL AND ¼ CUP OF MAPLE SYRUP.  ADD THIS TO THE OAT MIXTURE AND MIX UNTIL ALL IS WELL COATED.

SPRAY A 9 X 9 BAKING DISH WITH PAM AND, WITH WET HANDS, PRESS 2/3 OF THE OAT MIXTURE INTO THE BOTTOM.  POUR THE BLUEBERRY MIXTURE EVENLY OVER THIS AND SPRINKLE THE REMAINING CRUMBS ON TOP.

BAKE AT 400 DEGREES FOR 20-25 MINUTES UNTIL GOLDEN.

LET COOL AND THEN PUT IN REFRIGERATOR FOR ONE HOUR.  CUT INTO SQUARES AND SERVE.

This is a fancy dish for Shabbat  that was such a hit with our readers that we decided to repost it:

Combine the following ingredients in a mixing bowl:

  • 4 Rock Cornish Game Hens cut in half and dried with a paper towel
  • salt and pepper
  • 1/2  jar of duck sauce
  • 1/4 cup spicy mustard
  • 6 cloves chopped fresh garlic
  • 1/4 cup ketchup
  • 1/4 cup soy sauce
  • 2  big squirts of honey
  • these amounts can be varied according to your tastes.
  1. Place all Cornish hen pieces in a roaster that is sprayed with Pam.
  2. Mix all sauce ingredients and pour  over Cornish hens- for better flavor- RUB sauce onto chicken(I use kitchen gloves).
  3. Roast uncovered for 50 minutes- 1 hour 350- 375 degrees till golden brown and carmelized.

Sprinkle chopped parsley on top and serve with a fruited rice on the side.

You can also use chicken cut in eight pieces for this recipe.
