Easy Gourmet Ricotta Pesto Pizza with Zucchini Pizza Slices


  • 1 package prepared pizza dough
  • 1/2 cup prepared pesto (In running Cuisinart first drop in 3 garlic cloves, then mix 1 bunch cleaned basil, 1/4 cup pine nuts, salt, drizzle of olive oil- don't over process)
  • 1/2 cup ricotta cheese or enough to cover pizza round surface
  • 1/4 cup Parmesan
  • Sauteed sliced mushrooms in garlic and olive oil


    Spread ricotta cheese on the dough,
    then spread the pesto sauce
    Sprinkle Parmesan and sautéed mushrooms on top.
    Bake at 400 for 10-15 minutes

Easy Diet Zucchini Pizza Slices

My daughter Joy created this easy diet pizza recipe and shared it on @thejewishhostess Instagram in a snap.


  1. Slice zucchini in thin rounds and bake on a sprayed parchment for 20 minutes.
  2. Slide out of the oven and spoon marina sauce on top of each one.
  3. Sprinkle with shredded low fat cheese and oregano. Bake at 350 degrees till cheese is melted and toasty.

Pizza recipe trends are constantly evolving, and this carb-free, low-fat Passover version from Emanuelle Lee of London is one that you will want to whip up all year round. If you are a Passover hostess that is trying to escape the post holiday waistline bulge, then this recipe is for you!

    For the crust:
  • 1 Cauliflower cut into small pieces (or equivalent amount pre-cut)
  • 1 egg
  • 2 tsp garlic paste
  • 1 tbsp grated cheese (preferably mozzarella)
  • 2 tsp olive oil
  • Salt and pepper
  • Polenta mixture
  • For the sauce
  • 1 clove of garlic (chopped)
  • 1 can cherry tomatoes
  • Olive oil
  • 2 Tsp sugar
  • 1/2 chilli flakes
  • Fresh basil leaves
  • 1/2 teaspoon oregano
  • Salt and pepper
  • Low fat mozzarella cheese


  1. Preheat oven to 400 Degrees F.
  2. Blend the cauliflower in a food processor until it has become a grainy paste. Pour into a mixing bowl and mix in the garlic paste, olive oil, egg and grated cheese. Mix all the ingredients together. Add a pinch of salt and pepper.
  3. Cover a flat baking tray with parchment paper. Grease the paper with a little bit of olive oil. Sprinkle a pinch of polenta mixture on to the tray.
  4. Take about 3 heaps of cauliflower and flatten it out onto the tray with a spatula into the pizza shape of your choice.
  5. You should have enough 'dough' left over for 1 another medium sized pizza. Repeat sequence with the rest of the dough.
  6. Bake for 20-25 or until golden. With a large spatula, carefully turn the pizza crust over and bake the other side for 10 minutes.
  7. (You may put the crusts under the broiler for a few minutes to make them extra crispy but make sure they don't burn!)
  8. While the crusts are baking, make the sauce. In a pan, heat up a tablespoon of olive oil, add the chopped garlic, sauté until softened a little and add the can of tomatoes. Smash the pieces of tomato so the sauce is a little smoother. Add the rest of the ingredients.
  9. Once the pizza 'dough' is golden and hard, smooth a large amount of the sauce on top and leave about a half inch space around the outside to make the crust. Top with (low fat) fresh mozzarella cheese and top with a little olive oil, salt and pepper.
  10. Add your favourite toppings. Bake for 10 minutes. Sprinkle some basil leaves for decoration and enjoy! (guilt-free!)

“Hi Marlene,
Last week I had my friends over lunch and cards. Being that we are all always dieting, I tried to make a healthy and delicious lunch menu.
I scoured through my cookbooks new and old. Borrowed my sister in law’s Dare to be Different kosher cookbook by Robin Jemal.

I found a lot of new recipes. I must give credit to my sister Laura Shammah – who got this Cauliflower Crust Pizza recipe from someone she works with. It is amazing!!!!!!

Cauliflower Crust Pizza:

  • 1 head cauliflower – chop and grind (in food processor)

microwave 6 minutes (no water)
this makes 3 cups

  • 1 cup of the cauliflower
  • 1 egg or egg white
  • 1 cup shredded cheese
  1.  put on cookie sheet that is sprayed well
  2. don’t let edges of crust mixture touch sides of pan used as that will make the edges hard
  3. bake at 450 degrees for 15 minutes
  4. put on toppings I roasted some veggies. and cheese
  5. put back in oven just until cheese is melted

Roasted veggies on Ezekiel wraps.

Tofu sticks. They are breaded in flax meal and corn flake crumbs. And baked!

Puff pastry filed with mushrooms,peppers and a few carrots.

"Hi my name is Susan Zeitoune, I am 17 years old and I made a dinner party for my friend's birthday. 
The theme was Dylan's Candy Bar so I wrapped cubes with Dylan's wrapping paper and put octagonal 
mirrors on top for individualized food. The food was all homemade and placed in differently shaped mini lucite cups and bowls. 
(From left to right) mini penne noodles with sauce, mini veggie pizzas, calsones, mini pizzas, 
fried breaded fish, mini spinach cupcakes, mini salmon with teryaki sauce over couscous, 
sambousak, grilled french green beans with peppers, and mini challi rolls. 
The names for place cards were written on the little striped candy boxes and the napkins were 
Dylan's Candy Bar dessert napkins. For dessert there was 10 different hard and chewy candies in cones 
to choose from, mini Oreo cakes with frosting, mini fruit kabobs , Kit Kat and
M&M cake and Dylan's Candy Bar fondant cake. (All homemade)."

This recipe was such a hit that I decided to re-post it. Zaatar is a tangy, addictive spice that is actually a mixture of dried herbs, sesame seeds,  sumac, and salt.  It is a centuries-old mixture dating back to at least the 13th century. Exactly what those herbs are, and how all those ingredients are proportioned vary from culture to culture and family to family. If you would like to create your own memorable zaatar recipe, you  can start  HERE, and  give or take a little until you create your own personal zaatar potpourri.

Great last minute yummy pizza!

Kids and adults love it- great for parties! Perfect for your Purim Seuda!!

    • Mazor’s Pizza Dough- these come ready made- I buy whole wheat mini pizza doughs at Kosher Corner.
    • Zaatar spice
    • olive oil
    • shredded low fat mozzarella cheese
    • delete the cheese, or use cheese substitute and it becomes dairy-free and vegan!
  1. place pizza doughs on Pam sprayed parchment paper on a cookie sheet
  2. mix zaatar with 1 teaspoon of olive oil, salt,  pepper and sesame seeds (to taste) in a small bowl
  3. spoon mixture on top of each pizza dough
  4. sprinkle cheese on top of each one
  5. bake at 350 degrees for about 20 minutes

My friend Jamie is one of the best friends that a girl can have. She also is a gourmet cook and has tons of great tried and true kosher recipes at the tip of her tongue. She is also one of those girls that would never leave out an ingredient so I know all of her recipes are perfected. If I could just find about two hours to  write them all down, I would have enough great kosher dishes to keep this blog going for at least another six months!

“We are all looking for easy Passover recipes, especially great Passover recipes for kids tastes.

This is really the best Passover recipe for  pizza dough . You can use with  any dairy pizza topping or with a meat topping such as lahamagine.

I form balls out of the dough, flatten them with a (Passover) tortilla press and shape with a (Passover) cookie cutter.” Enjoy! -Jamie

Ingredients for this Kosher Passover Pizza Dough Recipe

  • 2 cups of matzo meal
  • 1/2 cup cake meal
  • 1 tbsp salt
  • 1 egg
  • 1 cup  of warm water
  • 2 tbsp oil


  1. -Mix dry Passover pizza ingredients by hand
  2. - add egg, add oil
  3. -then add water slowly to form a dough ball
  4. - form into balls and flatten by hand.
  5. -pizza tastes better if flattened by tortilla press or rolling pin as stated above.
  6. - top with your favorite kosher for Passover pizza toppings!
  7. or shape and freeze for instant use.

What’s for dinner????

Everyone has a different variation of a pizza recipe.  My pizza recipe is from the  “Deal delights cook book #2”:

  • 1 pkg of active dry yeast,
  • 3 cups of flour,
  • ½ tsp salt
  • 2 tbs. vegetable oil
  • 1 cup of hot tap water

In food processor pour in water, sprinkle yeast. Pulse machine on and off just till yeast dissolves.

Add flour and salt and oil. Process 10-15 seconds or until dough forms a ball (if sticky add flour and if dry add water) let dough rise for 10 min and roll out

Pizza topping  #1– Slice  a mozzarella cheese ball and place on dough. Pour Don Pepino 15 oz can pizza sauce (sold at most grocery stores) over cheese. Sprinkle lightly with parmesan cheese. Then drizzle with extra virgin olive oil.

Pizza topping #2- My friend (Celia Haddad) gave me her recipe which I am going to try this week.  She puts sauce and mozzarella cheese. Then she mixes baby arugula lightly with vinaigrette dressing and when the pizza comes out of the oven she puts the salad on top. It sounds yummy.

Enjoy the rest of your holidays and remember you can’t go wrong with a pizza.  Anyway u make it is sure to be a hit!!!

The Quickest Onion Herb Focaccia Recipe Ever

I always wished I could whip up a good focaccia recipe in time for the family dinner, but somehow I would get discouraged by the endless time and energy needed to get it right. Now all you have to do is run in to your favorite pizza store to get a batch of dough and you are halfway there.  This recipe does the trick for a busy Jewish mom. Enjoy!
  1. Buy fresh dough at your local pizza store or buy the frozen kosher brand at the supermarket.
  2. On a floured surface, roll out 1 pound refrigerated pizza dough into a 10-by-15-inch rectangle;
  3. Press into an oiled rimmed baking sheet.
  4. Mix 1/4 cup olive oil, 2 tablespoons chopped rosemary and/or oregano, 1/2 teaspoon red pepper flakes and a big pinch of sea salt.
  5. Brush half of the herb oil over the dough, then set aside until puffy, about 1 hour.
  6. Make dimples in the dough with your fingers and top with thin onion slices and shaved parmesan.
  7. Bake at 400 until golden, about 20 minutes.
  8. Brush with the remaining herb oil.
