Meet my favorite Mom with a Mission- Rachel Orenstein Packer. Last year Rachel and I met somehow via the web, and Rachel graciously offered to write up some recipes for adults and kids that have egg, nut, and dairy allergies, which oddly seem so prevalent nowadays. Rachel was so passionate about the topic, she then started her own blog, Life is Good, Lick the Bowl and her recipes and valuable advice have been featured in many magazines, newspapers and blogs. Try this Hammentashen recipe which uses moist tofu as a useful substitute for eggs. 

 

Egg, Nut, and Dairy Free (Vegan) Hammentashen

As you may know, my youngest, Ari, was diagnosed with food allergies to eggs and nuts three years ago.  At the time, Purim was just around the corner and it painfully dawned on me that he wasn’t going to be able to eat any of the hamantashen. Ari usually begins asking for hamantashen in September. Clearly, this was going to be difficult.

My attempts to distract him by focusing on Purim’s non-food related activities such as the costume and the carnival, ultimately failed.  After all, food is the cornerstone of every Jewish holiday and the iconic hamantash is the defining food of Purim.  I hated the fact that food allergies had so quickly dampened Ari’s joy of Purim, and I was very determined to change that.

It has been three years since that fateful day at the allergist’s office, and while there have been plenty of adjustments, mistakes, questions, and frustrations along the way, one thing is certain…Jewish holidays feel joyful again.

This recipe for Chocolate Hamantashen is my family’s favorite creation thus far.  It’s a kosher recipe thats egg, nut and dairy free, and if you have any vegan friends or relatives on your mishloach manot list…these are perfect.  For those who are faint of heart when they hear the word “tofu”, please don’t be.  These hamantashen are so filled with chocolaty goodness, honestly, you can’t even taste it…really.

If you are baking for a nut allergic individual, make sure that your ingredients (especially the chocolate) are truly nut free.  Please be aware that not all chocolate is the same.  Some people are highly sensitive to chocolate products even if they don’t contain nuts because they are made on the same product line as nut candy.  To play it safe, always check your products carefully and ask questions. Rice Dream Semi Sweet Baking Chips, (these aren’t made in a nut free facility, but they use very good manufacturing processes to avoid contamination). They are also completely gluten free but do contain soy.  They pack a nice chocolate punch. They work better as a filling for larger hamantashen. OU Pareve.

Enjoy Life Chocolate Chips. These chips are manufactured in a nut, gluten, egg, and dairy and soy free facility.  Can’t go wrong with these and they are great for a chocolate ganache.  They melt very well and taste amazing.  They only come in mini form.

HASHAHAR H’AOLE Cocoa Parve Spread.  This is my go to for filling hamantashen.  The container specifically states that they are nut free.  Their website indicates that there are no nuts in any of their products.    Again, if you aren’t sure, ASK!  Chag Sameach.

Cocoa Powder- I use Hershey’s without any problems, but again…some people may be sensitive. Always check the labels.

 

Chocolate Hamantashen- Makes approx. 3 dozen small hamantashen

  • ½ block Soft Silken Tofu (I use Mori-nu brand)
  • 1 cup sugar (I use Florida Crystals)
  • 1/3 cup canola oil
  • 2 tsp. vanilla
  • 1 ¾ cups flour
  • ½ cup cocoa powder
  • ½ tsp. baking soda
  • 1 tsp. baking powder

A Word about Tofu

Tofu is very easy and versatile.  In fact, I use it in many baking recipes for various holidays. Below are a few tofu pointers.

  • It comes in different consistencies.  For this recipe, soft, silken tofu is best.  Drain the tofu for a few minutes to remove any excess water.
  • Tofu comes in a vacuum-packed box in the refrigerator section of your grocery store (usually in the produce section).
  • Cut along the dotted lines at the top and the tofu will easily slide out, just gently guide it into the strainer.
  • After draining, cut the block in half.
  • Before placing it in the food processor, cut the ½-block piece into smaller pieces to distribute it more thoroughly in the food processor.

Directions

  1. Preheat oven to 350 degrees.  Line a baking sheet with parchment paper.
  2. In a food processor, blend the tofu, oil and sugar until ingredients are smooth and creamy.  Make sure to scrape down the sides in order to get all the little bits of tofu blended.
  3. Add the vanilla and blend again.
  4. In a separate bowl, sift the flour, cocoa, baking powder, baking soda, and salt.
  5. Combine the liquid ingredients with the dry and mix.  You will have to switch to using your hands until it becomes dough.  The dough will be sticky.  If it is too sticky, just sprinkle with some more flour while you work it into smooth dough.
  6. Place the dough into a Ziploc bag, or wrap in saran wrap and chill in the freezer for an hour.
  7. When you are ready to roll out the dough, work with what you need and keep the rest in the freezer.  The dough softens rather quickly and is delicate so you have to keep it cold and work fast.
  8. Place the dough on a floured surface (I usually cut a gallon size Ziploc bag in half and place the dough between the two sheets with a little flour, I find that the dough doesn’t stick to the bags as much.
  9. Roll the dough to ¼-inch thickness and use a round cookie cutter to make rounds.  I actually use a small juice glass that is 2 ½ inches round.  You can make them bigger if you so desire.
  10. Fill the hamantashen with a ¼  to ½ tsp. of filling.  You can use fruit preserves, jellies, chocolate ganache, plain old chocolate chips (use mini chips for mini hamantashen because they don’t tear the dough), or my favorite…Israeli chocolate spread.
  11. Bring the sides up over the filling and press into a triangular shape. Pinch the seams closed so the filling doesn’t ooze out.
  12. Space the hamantashen out about an inch apart on your baking sheet and bake for 15-17 minutes.  Remember, if you want them crunchy like a cookie; keep them in longer than 15 minutes.  If you are a cakey hamantashen lover, then begin checking them at around 13 minutes to see how well cooked they are.
  13. Remove and cool for about 1 minute on baking tray, then transfer to a cookie rack.

10 Fresh and Fabulous Last Minute Ideas for Purim

Looking for some last minute Purim ideas for Mishloach Manot? Here are some easy ones that you can use for inspiration this Purim holiday. If you are not really sure about the meaning of mishloach manot, just click here, and then continue reading below!

1- Make a ton of  mini biscotti and pile into a small or medium mason jar. Tie  a decorative ribbon and silk flower around a bottle of  inexpensive kosher sweet wine and have your kids deliver the combo to all of your friends and neighbors.

2- Give out warm kosher hot chocolate, skewered marshmallows, pink chocolate dipped rice krispy treats that are rolled into a ball (right after cooking the mixture)in a cute Wilton Striped Cupcake Box. Very cozy!:

3- My niece Shirley who is a professional baker, was inspired by Bakerella’s cookie mix in a jar, and turned the idea into a fabulous mishloach manot. Their entire family stood in an assembly line and filled and scooped until they were done with all of their beautifully filled jars.  It really was one of the prettiest mishloach manot that I received last year. 4-Bake orange juice cakes in mini loaf pans and send them with a mini bottle of fresh orange juice  or a mini Tropicana juice box from your local grocer. You can find fruit themed tissue paper from Bags and Bows and for a real home squeezed feel, use a crate from an empty clementine box, or a Purim basket that was stashed in a storage bin during last year’s Passover cleaning.

5- Last year my sister in-law  invited us to her annual gala Purim party with a printed potholder that held a note explaining that all the moms invited were to be united in a cooking contest. What a great way to invite the family over without not actually having to cook anything! (lol…)  Each family was given a rolled up note with what main dish or salad to bring.  The “judges” chose the winner who received a gift certificate to Kitchen Kaboodles on Avenue U in Brooklyn. All in all, it was so much fun and easy to for everyone to walk in with part of the Purim seuda.

6- Need an adorable Purim card to attatch to your mishloach manot? My very creative friend Erika Sabbagh sent in this unforgettable idea. Dress your kids up in their Purim costumes, take a pic,  print it on cardstock within a card making or a label software, print, and you are done!

7- Make an sweet treat, pile into food bags, tie with raffia or a pretty ribbon, add a bottle of  kosher grape juice, a fresh daisy, place a decorative napkin inside a disposable 
paper loaf pan and deliver!

8-Borrow some of Martha Stewart’s Valentine’s Day ideas and transform them into your Purim Jewish hostess treats!

9- Be inspired by The Kitchn’s skillet toffee and 39 other homemade gifts. It’s a mouthwatering roundup of melt in your mouth treats. Any one of these delectables would make a unique Purim gift to send. Make sure to add two different items in your package so that your  recipient can make two prayers according to the Purim custom.

I’d like to give you some Purim table inspiration so here is my  Purim 2011 story.

It was Thursday morning when I realized that I was so busy posting articles about how everyone ELSE should be inspired for Purim, I couldn’t believe that I had no table setting,or menu plan of my own .

Here’s when a kid with a driver’s licence will come in handy.

One of my  kids  waited in the car while I ran in to Lana’s fabric on Kings Highway to buy Zebra polyester fabric -$5.99 a yard cut into 54 inch squares- cost  about $25.

I placed the 2 squares as diamonds side by side on top of my white cotton hemstitch tablecloth.

While on her way to Starbucks another of of my kids ran and bought me a pack of white paper napkins that look just like linen. $10.99.

She also bought grey luncheon napkins that we decided to fold over the white large paper napkins $4.99.

I also bought  a silver chain trim  from the fabric store to use as napkin rings. $3.99 a yard. Pretty- no?  cost about  $15.

You can use this napkin idea for your Passover seder.

These sterling ice coffee glasses given to us a wedding gift by Aunt Sydelle and uncle Mosie in the 80’s. About 15 years later I realized that they were still sitting in the closet needing a good polish, so I decided to turn them into vases, and I  haven’t stopped using them since! My daughter ran out and bought me the dendrobium orchids from the corner flower kiosk up the block, and I stuck these exotic masks that I ordered from from AnytimeCostumes for about $10 each into the “vases”.

So many of my goblets have broken over the years that I had to alternate clear goblets from Target with my pretty new blue goblets given to me as a Rosh Hashanah gift from my  new “consuegra”- (Syrian word for my daughter’s mother-in-law.)

Lunch was not bad if I don’t say so myself.

Since the Purim Seuda is traditionally a meat one,

We had grilled chicken with kalamata olives and tomatoes on salad,

melt in your mouth minute steak roast,

wild rice with spinach and sauteed red peppers, plain white rice (for the kids),home made za’ata challah rolls filled with sliced turkey,

(let me know if you want any recipes……)

mini lahamageen,

mini kibbe, tehine, mini baked sweet potatoes,

pareve kibbe neye,

whole wheat mazor’s dough with meat hammentashen filling,

fried chicken (for the kids), and my sister Jeanette brought chicken tacos that got wiped out. (click HERE for the recipe)

I have advice for all of you Jewish Hostesses out there- Being a Jewish Hostess doesn’t mean you have to be a super woman and  make everything yourself!!! I BOUGHT the lahamageen, kibbe, and fried chicken from Kings Highway Glatt. I called them 3 minutes in advance and the kid that was on her way HOME from Starbucks ran in and picked it up for me.

So, if you are organized and want to make it all yourself,then, great, but if you are a last minute  type like me, and if you are lucky enough to live near some kosher butchers and kosher grocery stores that sell delicious ready made kosher appetizers…..

The highlight of our day came when Gail and Andy came to say hello…..

But we really had a great laugh when the  Gail’s normally very serious dad,Ricky C. also rang our doorbell and hung out for dessert.

Ok, I’m literally speechless as I post this spectacular Purim fantasy. I’m sure that every kid on the block will wish that Raquel Dabah was their grandma when she unveils this candy encrusted maypole on Purim Day.  This is also a great kid’s party or bridal shower idea. Every year on Purim, my mom dresses up, and my dad also wears a matching costume. My mom goes all out and invites everyone on the street to hear the Megillah and later have brunch at her home.  She always creates  a unique intricate theme. This year was the first time she singlehandedly created this maypole. It has stone encrusted ice cream cones, and packages of candy hanging from ribbons held together with baby hair clips, there are cellophane bags for the kids to come in and fill there bags with crunchie bars, marshmallows sour sticks, jellybeans, gumdrops, lollipops and more. She bags her own Hamatashen, sambusak, cheese cake and more.  It’s beautiful and delicious!”

7- “This was my friend Marjorie Eida’s idea. I bought the olive oil holder, jar, and cheese holder form Amazing Savings. There’s also a little chefs knife if you can see the handle in the pic. The olive oil was infused with garlic and rosemary, and herbs. In the little glass jars are 2 different kinds of olives, black olive tapenade and a sun dried tomato jam. I put a fresh mozzarella ball and garlic chive cheese. Roasted spiced nuts,  and homemade zaatar chips.” Laura Cohen

This is a much better picture, we made all different faces and pictures on the flowers, with edible markers and edible glitter. We made regular chocolate cup cakes and used green laffy taffy (called fizzers here)

Here’s my mishloach manot.I made the 2-tiered servers by gluing candlesticks to plates and bowls with
epoxy, spray painting the bottoms with silver paint (priming first), then gluing them together.
In the top bowl are meringues (I’m obsessed with them…the best guilt-free
dessert…I have them perfected so they are crispy on the outside and chewy
on the inside). On the bottom are vanilla and strawberry macarons with pareve cream cheese
buttercream (heaven! These little things live up to all the macaron hype).
Those mini cupcake holders are from The Peppermill.
The little almond cakes have marzipan in the recipe (really delicious), and
are covered with homemade marshmallow fondant. The flowers on top were made
with gum paste and white, silver, and pink edible pearls.
I developed and perfected all the recipes myself.
Everything was pink and white. The finished product was wrapped in
cellophane and tied with white grosgrain ribbon with silver dots. It looked
like a $100 but each one cost less than $5! “Victoria Dwek

Whole Wheat Meat Hammentashen Empanadas for Your Purim Menu

Last year, as I was racking my brains for a new  Purim menu idea,  I decided  to take the easy way out and re-create my standard empanada recipe. In a pinch, I transformed it into a meat version of a Hammentashen. Usually I fold this empanada meat mixture into a wonton skin, and in the olden days (when I was young and skinny) I used to individually deep fry them as a special treat on Sukkot. Later on in life I got a great tip from my older sister, and I sprayed the meat filled-wonton skins with Pam (see*note below) and baked them till they were crunchy. For a last minute Purim appetizer, I decided to use the same delicious meat mixture and bake  it as a hammentashen. Here’s how I did it:

  • 1 onion, chopped
  • 1 lb chop meat
  • 1/2 green pepper, chopped
  • 1 clove garlic, minced
  • 1 tsp oregano
  • 2 tsp white vinegar (the vinegar tenderizes the meat)
  • 2 tbsp oil
  • 1 can tomato sauce
  • 10-20 stuffed green olives, sliced
  • 1/4 cup of sesame seeds
    1. Saute onions, pepper, garlic in oil adding garlic last.
    2. Mix in meat, oregano, tomato sauce, white vinegar and sauté all ingredients till meat is brown, making sure to chop the meat with a fork as it is cooking.
    3. Add sliced olives and mix with a fork.
    4. Place 1/4 cup of sesame seeds into a bowl.
    5. Take a whole wheat Mazor pizza dough and press into sesame seeds.
    6. Place pizza dough on a flat dish and mound 2-3 tablespoons of meat inside.
    7. Fold up and pinch all three edges as you would fold your hammetashen to form a triangle. You may freeze these meat hammentashen at this point.
    8. Bake at 350 degrees for about 25 minutes or until bottom of hammentash is lightly brown.
    9. Serve and enjoy!
    10. *P.S. I really wouldn’t recommend spraying Pam on my food anymore. This misto Olive Oil spray is much healthier and a cleaner way of adding some spritz to your baking and cooking.

Dear Hostesses, I know that your are all thinking that I am the one responsible for this magnificent jungle themed table, but no, I must admit- all of the credit goes to my official partner in crime, my sister in law A……Mamiye. About two weeks ago, she graciously invited my family over for a Purim Party Seudah, and thrilled to be let off the hook, I quickly accepted.

A….. always puts extra effort into her Purim Party theme and  literally involves every member of her family into the fun of the holiday. One year she came to my door dressed as the wicked witch, with themed mishloach manot in hand, and each kid (plus my brother in law) was in tow as another member of the Wizard of Oz family. (I was told  that if I posted the pictures, I would be excommunicated). Another fun year she made us all dress up in 80’s garb and I had a great time exhuming my old favorite lime neon green shoulder padded short jacket (the matching mini-mini skirt wouldn’t zip), and I blew off the dust from my beloved 3 inch hanging gem encrusted  gold costume earrings (why I still have all that stuff, I do not know). I PUFFED up my hair, and tried to replicate my  Stagelight blue eyeshadow (who remembers Blue Roses sticky lip gloss?). ( If this era applies to you,  click here and reminisce with fads from the 80’s). Anyways, Allegra treated us all to a whole 80’s experience that Purim holiday, including an entire homage to Rick Springfield and his music. (ahem).

 Fast forward to Purim 2012- Knowing that we would have to spotlight this holiday table on The Jewish Hostess, we quickly began to brainstorm.  An adventurous sarfari theme came to mind and we got to work. Digging into both of  our  storage closets, we dug up anything and everything that was wood, orange, green, exotic, and bright. Within three minutes my niece was at my door ready to pick up my tropical finds.

A….. went to work on the computer and in her own words “‎​Got the bandana’napkins’ and the hanging balls and animal print bags from Oriental Trading. Dirt cheap. Got the ‘bambu’ disposable plates from Paper goods. All the rest is yours and my stuff dug up from the archives!”

A….. spent the next two days singlehandedly setting up her table, and  so excited with how it was coming out, she called me at midnight to come check it out. 

Twenty years ago A….. and I used to dream of running to Bergdorfs, but now all we were thinking of was when we could find a minute to run to the flower market for some brights  that would polish off the table. We finally got there yesterday, parked illegally and within 10 minutes we had acquired a bunch of beautiful vines, leaves, and exotics, plus, of course, a parking ticket.

I ran to the fruit store (this was the one day of the year that Ouri’s didn’t have baby bananas!) and I grabbed some mangoes, kiwis, oranges, and pineapple, brought it to her house dumped them into our wood bowls, and within three minutes we were ready for photographer Gary Zindel to snap some photos.

Bridal Shower Cake, Sheva Berachot Cake, The Jewish Hostess

This is a wonderful and easy romantic berry cake that any level baker can whip up like a pro. I am hosting a Sheva Berachot next week and this cake is tops on my dessert menu.  Save this in your desserts folder for any heart shaped themed dessert such as Mother’s Day, a Bridal Shower, and Sheva Berachot. I would also cut out a dreidel shape for Hanukka, or triangle for Purim. Why not? The fillings are unlimited too! Use a tree shape for Tu bishvat and mound with new fruits and voila! You’ve got your own unique dessert creation! Have fun and send me your fruit filled cakes- I would LOVE to see what you’ve come up with!

p.s.- This cake is also a perfect pre-Passover excuse to start baking up the Hametz ingredients in the kitchen…

Sheva Berachot Berry Filled Heart Cake

Ingredients

  • 11/2 cups superfine sugar
  • 11/2 cups softened butter (margarine/dairy free butter)
  • 4 eggs beaten
  • 11/2 cups self raising flour
  • 1 tsp baking powder
  • 2 tbsp milk soya milk
  • for filling:
  • 1 cup butter/dairy free butter
  • 1 cup icing sugar
  • strawberry jam
  • (To make icing mix together butter and icing sugar in a food processor)
  • red berries of your choice

Instructions

  1. Pre-heat oven to 180 Degrees C or 350 Degrees F.
  2. Mix all cake ingredients together. (Make sure eggs are beaten before hand and butter is beaten before hand). Make sure the mixture is smooth and there are no lumps.
  3. Grease two round 8 inch cake trays.
  4. Bake for 20 - 25 minutes or until golden brown.
  5. While the cakes are in the oven, take an A4 piece of paper and fold it in half.
  6. Draw half of a heart on one side of the fold.
  7. Cut out the drawn half heart shape while the paper is still folded. You should come out with a heart shape.
  8. When the cakes have baked and cooled, CAREFULLY remove them from their cake trays and place them on a large flat surface.
  9. Place the heart stencil on the top side of one of the cakes. Carefully, with a sharp knife, cut around the shape. Make sure the cake is fully cooled. (You might want to keep your icing in the refrigerator until needed).
  10. Evenly spread a medium layer of icing on the other piece of cake.
  11. Spread jam on top of the icing, but leave centre (where heart will be) without jam.
  12. Gently and carefully place the cut-out-heart piece of cake (with a large spatula and help from a friend if possible!) on top of the other piece.
  13. Make sure it is placed evenly (and the heart actually looks like a heart!)
  14. Pour the fresh red berries in to the heart shaped 'hole'.
  15. Sprinkle with icing sugar. Enjoy!

Heirloom Tomato and Olive Tarts, The Jewish Hostess

*A note on heirloom tomatoes: 

The popularity of these old fashioned tomatoes has increased among hostesses in recent years due to their refreshing flavor, texture, and crazy colors, and  also because of their historic origins. To be certified heirloom, these tomatoes have to be grown from seed that has produced the same variety of tomato for at least fifty years, and they must be certified organic by a recognized USDA organization.

Heirloom tomato seeds have been handed down from generations of tomato growers whose love of these tomatoes has been shared with their neighbors and communities. Their titles tell the tale of their origins and the farmers who have grown them. Varieties such as Cherokee Purple, Great White, Green Zebra, Nebraska Wedding, and Snow White Cherry are sweetly  juicy served on in recipes like the one below, or just drizzled with olive oil and salt and pepper in a savory summery salad. I’m running out to buy my heirloom tomatoes NOW!

Heirloom Tomato and Olive Tapenade on Puff Pastry Dough

Ingredients

  • Mazor Dough mini puff pastry squares
  • 1/3 cup store bought olive tapenade
  • 1 cup shredded mozzarella or fontina cheese
  • 8 heirloom cherry tomatoes, quartered
  • 5 Fresh basil leaves, chopped
  • Salt and pepper

Instructions

  1. Directions:
  2. 1. Preheat the oven to 400
  3. 2. Remove mazor mini puff pastry squares from casing and use round cookie cutter for each square . ( if you prefer squares then leave them as they are ) about 16 rounds
  4. 3. Prick the pastry with fork
  5. 4. Place pastry rounds on baking sheet lined with parchment paper.
  6. 5. Lay a piece of parchment paper over the pastry rounds.
  7. 6. Place another baking sheet directly on top of the parchment paper ( this will keep the rounds cute and flat)
  8. 7. Bake for 12 minutes.
  9. 8. Remove the top of the baking sheet and parchment paper.
  10. 9. Spread tsp. olive tapenade over each round.
  11. 10. Place about Tbsn. Cheese on top.
  12. 11. Place 2 pieces of heirloom tomato on the cheese.
  13. 12. Bake for 7 minutes.
  14. 13. Remove from pan and sprinkle chopped basil and salt and pepper
  15. 14. Enjoy!!!!

DIY Mishloach Manot Purim Cards- For That Extra Special Touch

Dear Hostesses,

Every Sunday, we venture out to different parts of Brooklyn and NYC to check out some of the new exciting neighborhoods.

Last week, we journeyed out to Smith Street in Downtown Brooklyn and the sweet sight of moms and dads wheeling strollers and Sunday morning coffee shops made me feel like I’d like to spend a little time discovering the area. Looking for some great shopping, I started to scout around. You might be thinking that great spending to me means Intermix, Scoop, Chanel, and Prada- (well, it doesn’t hurt to window shop!), but really fun shopping is when I can walk into a store like Paper Source, and feel like a kid again. Located at 102 Smith Street, it’s a crafter’s dream.   For anyone that’s really a kid at heart, Paper Source will allow you to create to your heart’s content. The friendly staff will help you choose from arrays of colored and patterned paper, glitter, stamps, and tons more. (They didn’t pay me for this post! REALLY!)

I decided then and there, that I would try to see if I could challenge myself to some DIY Purim cards. After browsing around in heaven for a couple of minutes, I realized that I had to speed it up seeing that my hubby and kids were getting a little fidgety. I quickly threw some coordinating card stock, a wine bottle stamp, gold ink, leaf patterned ribbon, raffia, a burlap ribbon, and a hole puncher into my basket. As the sales girl rang me up, I also grabbed some packaged glue dots which ended up being a key ingredient to my DIY cards.

That evening, I was so excited to rip open my Paper Source bags. I felt like I had just gotten home from the toy store. The best part of the whole night was that I put away my phone, my kids became a part of the process, and together we created a fantastic mess, plus the one of a kind cards below.

The secret to this scrapbooking style of card making is to layer, layer, and keep on layering. And if you make a mistake, then LAYER again!

For my mishloach manot this year, I am thinking of buying wine, grapes, and cheeses and mounding in a basket. The greens and purple and golds were a good choice for me.

My sister in law Allegra is famous for her Hanuka and Purim parties. She puts extra special effort into making these holidays exciting for all her kids, nieces, nephews, and all of the extra guests that seem to find their way into her home. This is her favorite sugar cookie recipe. It tastes best when rolled out very thin and topped with fun sprinkles, frostings, chocolate chips, or whatever sugary toppings that you can concoct with your kids. Don’t forget to buy your Hanuka cookie cutter shapes!
Hanukkah Cookie Cutters – Set of 6- from Amazon

“This recipe comes out best when you refrigerate the dough for at least half an hour before shaping. Also don’t be afraid to add flour to your work surface and even to the dough and rolling pin-It really helps! Enjoy! ”

Recipe:

2 c sugar
1 1/2 c margarine
4 eggs
2 tsp Baking powder
5 c flour

Combine in order
Bake 350 approx 10-12 min

Looking for a great healthy recipe for tacos?

My sister Jeanette makes a great chicken taco recipe that her brood of hoodlums can down in a minute. (just joking- she has all boys B’H’ and when they come over all h— breaks loose!-Jeanette- I  really do love your kids with all my heart!).

When I invited her to my Purim party I silently panicked. You know that inner fear you get when you are not sure if you are cooking enough food? So, when she offered to bring a dish, I felt relief. I just told her to bring something that all of her kids will love. And she did!

When I texted her that my Jewish Hostess readers requested her healthy tacos  recipe as seen on my

Purim Party Post,

she replied,:

“Ooh how exciting!!

  1. Ok: heat an 8inch skillet wth a teaspoon of oil.
  2. Add 1 pound of organic chicken chop meat continuously breaking with a fork, until no longer pink.
  3. add 1/2 cup water and the seasoning packet that comes in the Ortega box.
  4. Shred lettuce, fresh corn off the cob and place in a t0asted taco shell with chicken on bottom.
  5. Its delicious and so easy. I serve wth mazza friday night!-

Classic No-Fail Hammentashen Recipe

Whether you spell it hamantaschen, hamantashen, hamentaschen hamentashen,or hammentoshen, every Jewish Hostess has their favorite Purim classic triangular cookie that will be handed down to their kids and grandkids. This great no-fail, easy recipe is on page 230 of the classic Red Deal Delights cookbook that was compiled by the Syrian Jewish women in on the Jersey Shore in 1985. This cookbook has traditional Sephardic recipes that is a must in every Syrian Jewish home. I wonder if they had Hammentashen in the old days in Syria…

You can order your Deal Delights cookbooks from the hard working PTA at Hillel Yeshiva.

Ingredients:

  • 4 eggs
  • 1 1/2 cups sugar
  • 1 cup oil
  • 2 tbsp vanilla
  • 2 tbsp baking powder
  • 1 tsp salt
  • 5 1/2 cups flour
  • 1 jar apricot butter
  • 1 jar prune butter

Beat eggs, and add sugar, oil, vanilla,baking powder, salt and flour (add flour slowly) while beating continuously until you have a workable dough.

Roll dough into baseball size balls and add slight amount of flour to reduce stickiness.

Roll flat with rolling pin.

Even the boys can get involved…..

Cut into circles using the plastic red top of a can of spray Pam.

Place one teaspoon of the fillings into each circle and squeeze with 3 pinches to form hammentashen shape.

You can even use kosher chocolate chips, Nuttela, and homemade fruit preserves as a filling! Yum!

Bake on sprayed parchment paper lined cookie sheet till desired crunchiness (about 25-30 minutes).

Hammentashen Challah for Your Purim Seuda

This year, our Purim meal is traditionally a meat one, and its a great time to have the entire family over and join in on a festive meal. This pareve challah recipe is a take on Haman’s triangular hat in which the Purim story of Queen Esther’s trial and tribulation is read to all men women and children on this happy and commemorative Jewish holiday.

“Hi Marlene,
These hamantashen challahs were a big hit at my Purim table so I’d like to share the recipe with you.
Sara Kasten.”
Filling:
  • 5 large onions
  • 6 cloves of garlic
  • 1/4 cup olive oil
  •  salt and pepper to taste
Chop the onion and garlic and saute in the olive oil until a golden brown.  Season with salt and pepper and let cool.
Use your regular challah recipe and when ready to shape, tear off medium pieces of dough and form into balls.  Use a rolling pin  to flatten the dough into a circle making sure it is not rolled too thin.  Spoon 1-2 tablespoons of the onion mixture into the center of the circle.  Pinch 3 sides together and form a triangle shape, but leave enough of an opening in the triangle so that the filling shows through.  Place on your baking sheet with the filled side down so that it will not split open as it rises.  Let the filled dough rise and brush with beaten yolk and sprinkle with sesame seeds.  Bake as usual for a small challah and cool on a wire rack. These may be frozen and reheated in a warm oven for 15 minutes before serving.  Enjoy the challah and the compliments!!

Let’s Bring Tu Bishvat Into The 21 Century!

The holiday of Tu Bishvat (or Tu bishevat) always summoned to mind a couple of  boring dried fruits on a paper plate given to us as ten year old kids in yeshivah. It wasn’t really very exciting, and I particularly remember almost breaking a baby tooth as we tried to bite off a bit of the dried black hard-as-a-rock carob boxer strip that was touted as a special new fruit by our teachers. Being one of the producers of The Sephardic Heritage Museum film project, I had the honor of interviewing over 300 community members, many of whom remember celebrating the exciting holiday of Tu Bishvat way back in Syria. I was astounded to  hear that the now pandemonium holiday of Purim was a mere passing around of Syrian pastries like Samboosak and Graybeh to their neighbors, but Tu Bishvat or “Id Il Jar” (pronounced Eed El Jar- the holiday of trees) was the one holiday that the children and parents alike truly looked forward to. Every year, a month before the holiday, the moms started to sew luxe velvet bags with a drawstring that would soon contain exotic fruits that the children had never seen before. We take our pineapples, watermelons, and  mangos for granted nowadays, but I doubt that there were carts in the souk in Aleppo that exhorted these wonderful sweet new treats. I was told that it would take the adults weeks to seek out and save these fruits to excite the children and keep the memories of the Tu Bishvat holiday alive.

Upon speaking to one of my Tu Bishvat bakers (below), Margalit Dweck, I was astounded to hear that she and her husband have a Tu Bishvat dessert “seder” table every year on the eve of the holiday (this year Tu Bishvat falls on Friday evening, January 25, 2013). Rabbi Joe Dweck reads from the special Tu Bishvat book (photo below), points out the new fruits to his children, and recites the berachot. He proceeds to tell some Tu Bishvat stories, and the kids show off their Tu Bishvat art creations made in school. As a special treat, Margalit whips up a pomegranate martini shared by her and her husband.

Rabbi Joseph Dweck was kind enough to relay to me some Tu Bishvat fruit for thought. He mentioned the halachic aspect of how, when a Jewish person plants a fruit tree, he is not allowed to eat from it for three years, and of course the new year to begin counting begins every year on Tu Bishvat,(so if you planted a tree a month before Tu Bishvat- by the time TuBishvat rolls around 4 weeks later, that first year is already counted).

On an even more inspirational level, Rabbi Dweck explained our human connection to the trees, and how it even began with the story of Adam and Eve. The holiday of Tu Bishvat should inspire us to see the beauty and sweet flavor  of Hashem’s proud work- the wonderful shades of red, green, and orange… plus the abundant flavor and juiciness that exudes from each one of the fruits that our trees bear. Did you ever stop to think that we are similar to the trees? We try to  grow strong, establish rock solid roots, and try to bear beautiful fruits that we are be proud of – our children, hessed, mitzvoth, and our work.

My sister in law constantly tells me that I am truly an old soul, and a gnawing ache in my heart propels me to believe that she is right. As The jewish Hostess, I have planted myself into the awesome job of treasuring the old customs while adding a splash of modern hues and excitement to our holiday ambiance.

Luv at First Bite by  baker Marlene Cohen. The perfect Tu Bishvat cake! (above)Branches and cherry blossoms! The bottom tier of the cake is a fluffy coconut cake, frosted with a parve buttercream frosting. The almond is mentioned many times in the Torah. It is described as “Among the best of fruits”. The almond blossom was also supplied as a model for the Menorah which stood in the Holy Temple.

“Tu bishvat encompasses a variety of delicious fruits and nuts that represent Israel, but it goes beyond that. In my eyes, the holiday also serves as a reminder for how our country was built, all the hard work that went into it (and continues to go into it), all of the men and women who joined forces to create our homeland. This kosher cake contains dried fruit and is encrusted with almonds, a clear correlation to tu bishvat. Frosted with chocolate to represent carobs, the top is decorated with date balls. They’re dusted with pink sanding sugar to tie in the gorgeous pink and brown theme. Circle-shaped and filled with so many accompanying flavors, the cake symbolizes all the different “flavors” that have worked together, not in a hierarchy but rather equally in a circle, to form our beautiful country.” By Yvonne Orfali- The Cravery. The bags and tags below were hand stamped with a cherry blossom stamp  by moi! When Miriam told me that as a child in Mexico they would run into the house with wide paper bags on Tu Bishvat excited for their delicious new and dried fruits from their parents,(originally from Aleppo, Syria) they played a game of, “Who sees ‘Id Il Jar?” (the holiday of trees). And when the kids said- “WE SEE HIM!!!” They would fill up their bags with candy. Inspired by her story, I decided to recreate my own rendition below…..
