My stand mixer died a few months ago, so we have been doing everything by hand. My hands and arms are tired! So I will use the mixer for everything! lol I will probably start with cookies for the kids, though. Then go on to something more exciting.
I have just begun home canning, and I’m looking forward to trying some freezer jams, too – all of which seem to require some kind of electronic help with the fruit! I’d also like to whip up fruity ice cream toppings for the summer. My Viking would get a pretty easy start…no full fledged baking till fall, when we get into pumpkin breads and holiday challlot!
Why do I want to win a new mixer? Thats easy, I’m using a broken down kitchen-aide that I bought my late wife about 15 years ago. I love fresh bread and had to learn how to make it myself of buy bread that to me is not much more than congealed wall paper paste. Admittedly it took a few years and a lot of mistakes before I learned how to make perfect bread all the time(hey I can plumb a house, swing a hammer, and use every tool in a cabinet shop),but now that I am very good at it my machine is nearly kaput.
So why me? The ladies at shul expect me to bring challah for our Oneg every week! YES, me the “Jewish Handyman”(I know that is an oxy-moron!)who not only can rewire the room and repair the ceiling in our Oneg Room but makes the best challah in the congregation. Since my mixer broke I have been making everything by hand including whipping cream, so winning the mixer would make a big difference to me. Mostly, I would like to use it for hard to mix things like cookie dough, challah dough, and of course whipping egg whites or cream.

3 tablespoons yeast
1/2 cup sugar
5 cups warm water
mix all ingredients and set aside for ten minutes for yeast to activate,
in seperate bowl sift 5 pound flour bag into the yeast mixture
add 1/2 cup vegetable oil
3 ROOM TEMP eggs
and 3 1/2 tablesppon kosher salt
mix all ingridents until dough starts to pull away from the sides of the bowl
Knead thouroughly around 15 minutes
let rise one hour with a towel covering the bowl, after one hour punch the dough down and wait ten minutes before braiding
once finished braiding brush one egg over the rolls and sesame seeds on top
***you can add olives,chocolatechips,raisins,cinnamon sugar,or whatever you like to mix things up*

I would make this BRAND NEW RECIPE I just came across for a Savory Spinach & Herb Cheesecake for Shavuot!
INGREDIENTS:
2 large tomatoes sliced
3/4 tsp blk pepper
3/4 tsp table salt
1/4 C Italian seasoned breadcrumbs
1/4 C toasted pinenuts
2 Tbsp melted butter
3 8oz pkgs cream cheese-softened
15oz ricotta cheese
8oz feta cheese-crumbled
4 C frozen chopped spinach-defrosted & squeezed dry
2 Tbsp flour
3 large eggs
2 cloves garlic-pressed
1 Tbsp fresh dill
PREPARATION:
Preheat oven to 350
Sprinkle tomato slices w/ salt & pepper, drain on towel for 10 mins/ Grind pinenuts, combine w/ breadcrumbs & melted butter; press into bottom of 9″ springform pan-bake for 10 mins. Cool pan on wire rack
Reduce oven temp to 325
Mix cream cheese in mixinging bowl on medium speed until light & creamy, add the ricotta cheese, feta cheese & eggs-mix until just blended. Add the spinach, garlic, flour, dill, 1/2 tsp salt & pepper. Pour batter into crust & bake @325 for 15 mins. Top the cheesecake with the tomato slices and bake 30 mins until set. Turn off oven and leave cheesecake inside for 20 more mins, then cool on wire rack for at least 10 mins. Gently run a knife around edge of cheesecake and carefullty remove springform ring. Cool another 10 mins.
May be served warm or cold.
